I'm just giving NW a serious try for the first time. I'm mostly a solo PvE player these days. I'm curious: What activities are there to participate in, especially at endgame?
Also, is a Paladin a viable choice for solo PvE?

If you absolutely want to play solo you miss out on a lot. You have Sharandar, Dread Ring and Icewind Dale with instances like Celadine's Tower, Phantasmal fortress and Biggrin's Tomb.
You have the two campaigns you can start at 60..Dwarven Throne and Maze Engine.
You can do Foundry missions for pathetic rewards.
That's about it.
You cannot (unless you have good gear) solo the HEs to farm motes for the elemental artifact weapons or to collect the underdark currency for Drowcraft gear.
You cannot solo the dragon heralds, go into any of the skirmishes or dungeons or perticipate in the guild dragonflight battles.
Getting all the boons will be problematic, and you will never have the best avalilable gear.
OK, maybe I'll go for group content, then. Is it just small groups, or are their also multi-player raids?
Is it easy to play in a group as a Paladin?

First, I recommend joining a good guild. You will get guild boons and the ability to participate in content like Dragonflight (10-40 players killing 1-4 dragons together).
However...many of the top guilds only want level 70 players so one alternative is to play mostly solo for levels 1-69.
You can queue up solo for 3-5 man skirmishes and dungeons or you can make a group before (another reason why joining a guild is a good idea) and queue up together. There is 10 and 25 man content at level 70 (epic Demogorgon and Tiamat) but that is not relevant for now.
Any class can do the solo PvE content easily...a Paladin does not kill as quickly as some of the other classes but he is not as "squishy" as some other classes eithet.
A paladin is generally quite popular in the 5-man dungeons, either for his ability to provide heals or to protect others (Known as "healadin" or "bubbladin") It would not hurt to look at a few paladin build guides online to determine what kind of paladin you want to be and how to get to that point.

Pallys, like most utility classes, are in short supply in NW. You won't find it hard to get a group. You will probably need to make a cleric as a 2nd character though, you will probably need its sigil (http://neverwinter.gamepedia.com/The_Vault_of_the_Nine).
Just jump in, be open to playing with a group, make friends and have fun. You won't have a hard time.

Type 1: doing everything yourself. e.g mini dungeon in Dread Ring, etc. Type 2: doing everything with whoever happens to be there. No party. No communication. No formal organization. e.g. HE.
My characters usually do both type of 'solo' that do not need party requirement. They also do dungeon, SH Dragons with party (these are not "solo").

In all seriousness, the required level of commitment in MMOs these days is minimal, so 90% of it is "solo" already. 1-70? Solo. Daily quests / campaign stuff? Solo. HEs? Solo, for the most part - maybe some others will join to help, but you don't have to talk.
For some of the "end game" stuff, you may have to actually socialize with other humans, but again, it's minimal.
But if you think this is bad, you should have been around back in the Everquest era.

I really do miss the launch of EE. Before they buffed mob HP, and then NERFED their damage.
It felt like a good balance. But now solo content is pretty lax. It's only difficult for people that are depending on potions still.

Solo play, I remember that... then Mod6 dropped and I put my wallet away for good.

A Paladin is more of a support class in NW than a main tank? I've never been that great at tanking.
