I'm a Level 70 Guardian Fighter with Alchemy and Platesmithing at max levels. I'm looking to max out another crafting profession so I can get my last profession slot open.
I started to work on Leadership but I don't need astral diamonds at this point in time.
I was thinking of working on Jewelcrafting or Weaponsmithing.
I was curious what you guys would recommend I work on next.

Hmm, wow!
This will give you back the offensive and defensive enchantment slot you'll have to switch over to rather meaningless utility slots (now after DH nerf) when you get your artifact belt and cloak. And if and when you ever get your artiGear to legendary, you'll get additional off/def ones on top.
Also, when your Jewelcrafting approaches Level 20, consider mining some adamantium with your Platesmiths - the Lvl 21 processing task in JC gives 2k JC-XP, the mining/gathering task only 1300, at the same time demand. As you probably won't have used all that found aberrant pelts, you'll be bottlenecked by adamantium ore eventually. I admit I shamelessly buy that ore from AH for rather little AD...
I mean, if you can buy RP, and you're enchants aren't BIS, you always got AD to blow right?

None but Alchemy and Black ice really offer me much
Black Ice for Overload slots and Alchemy for potions which persist after death... good for PVP

The personalized rings are bound to character when you make them.

While the Personalized double-slotteds are bind on creation, the single slotted precursors are also created via Jewelcrafting and ofc fetch a good price on AH. The drawback is that you first have to acquire four Mithril grade tools to get them crafted with a slot - with a 60% chance.
The socketless rings are scrap metal, well, sell for low five digit sums on AH, and hence a net loss. High risk gamble - especially as there are established sellers, and they'll probably dump you out if you trespass into their market territory...
