You can find many of them under NPCs. You can change the skins of an existing encounter (selecting individual mobs in Detail mode) and get some of what you might be after. However, they will probably use the powers and tactics of the base encounter. I made a Dwarf rotter skin over the Hulk encounter as an experiment, for example.
I've seen giants in a few foundry quests, presumably using this tactic too. I had a Woah moment...until I took him out with at-will powers. So if you do it I would suggest skinning an enconter that comes close to the powers you might expect to face, if possible, or at least keep the challenge appropriate. Skinning a hard solo brute encounter, for example, may have been a better choice for that scenario.

The lack of encounter types is really frustrating, it would be nice to have a hard solo melee but its not there they really need to let us edit the encounters also
