The Aquarius & the Chevron separation can't be used at the same time because when they made the Odyssey, the only made so many costume changes possible. It's likely that they may not have liked the idea at the time of doing both of those.
There's no anniversary extension, just the omega particle extension. My guess on why they did that is that they figure people can always do the rest of the event alternate events to make progress. Edit: Apparently the WHOLE event was extended until Monday, but wasn't set up right away.
