Origin (for 2410 ships), Belfast, TOS, and the small default bridges (Vivid for small ships, the Prometheus ones for larger ones).

I actually do not use my interiors on ships that don't have a unique bridge and that wouldn't reasonably have a Starfleet or Klingon bridge (V'Shar or Gorn ships for example).
My Klingon has a Negh'Var with the Kahless interior (I think, the big one with the long TRIBBLE aisle and a subdeck full of Targs. I like my Targs. Yes, even how they smell ). For "Generic" Starfleet ships, my Galaxy uses "Justice" (I think that's what it's called) as it tries to emulate a Galaxy class bridge. My Nebula uses another one of those - the Nebula bridge in canon was a smaller one, but I came around to headcanon that this doesn't make sense as, at least in STO, the saucer is literally the Galaxy's so the bridge module is the same as well, just different lighting for flavour reasons. My Sovy on my 'rite uses one bridge I have never seen before, it was just suddenly there. I don't know what it's called, but it's a smaller one with a center Captain's chair and all stations being on the "sideline" except for what I think is CONN which is in front of the screen, and it features thick, shaggy red carpet and ebony/mahagony wooden trim (or black marble. Or something. It's super luxurious).
My other ships all have their unique bridge, the Garidian D'D has the Romulan one, my Deferi use Breen vessels, my Lukari will soon have the Lukari ship (Duh), my temporal piggy has a Wells.

I use the Aquarius bridge on my Odyssey, although I really don't care for the cathedral ceilings throughout the rest of the ship, but I suppose this is about the only ship that they could be reasonably believed to work on.
I use the TOS interiors on all of my TOS era ships, of course.
Since we don't have an ENT era appropriate bridge, I use the Belfast interior as a compromise. I also use the Belfast on the Defiant and other smaller escorts.
For all other ships, lately I've been switching over to the Voyager 2410 interior, because I just can't deal with the ridiculously wide and high corridors anymore.
I do love the Origins bridge. I really wish we had the rest of that interior as well, so that I could use it more, especially on my cruisers.

I keep meaning to check to see whether the Jupiter Carrier can use the Odyssey's Aquarius bridge, if you own both ships. The Jupiter's exterior certainly appears to have the same "skylight" cut into the roof over the bridge.
@angrytarg that's the Vivid bridge I think, one of the default ones.

I like the big star cruiser bridges from the Emissary packs for big flagships and the like. I'm flying around a command ship, I want to have the appropriate number of crew to boss!

I slap the TOS bridge on everything thats not lockbox, lobi, promo, etc. I WOULD use the Voyager interior if Cryptic would let me buy it and not lock it behind a bundle I am not able to get because of already owned ships (hint hint, nudge nudge)
I like the bridge on the APU Cruiser. Simple and not too large. Seems like a place that would serve as an effective nerve center of a ship, without having to yell across an arena to get the attention of your bridge officers. The starter Romulan bridge is the same, with the Origin bridge for Feds.
I use Intrepid (2410) for small ships, Galaxy variants for medium and the Sovereign variants for large ships. For KDF I do similar, but you need to get to know how big those bridges are....the Kahless is impressive!
"You don't want to patrol!? You don't want to escort!? You don't want to defend the Federation's Starbases!? Then why are you flying my Starships!? If you were a Klingon you'd be killed on the spot, but lucky for you.....you WERE in Starfleet. Let's see how New Zealand Penal Colony suits you." Adm A. Necheyev.

You know, the intrepid might not be a bad choice for my NX ... still mad that didn't get a bridge ...
I'm all about the TOS bridge, and use that every chance I get - for me, TOS is the bridge.
Otherwise, I fancy the "temporal" bridges like one sees in the Wells and temporal ships. On that note, I am especially happy about the fact that some of those are faction neutral, so my KDF toons can finally have a decent bridge.
Resident TOS, G.I. Joe, Transformers and hair metal fangirl.
Brotherhood bridge for my FT5-U Nova. Feels a little too big really, but it's the best compromise.
Would prefer to use the Delta bridge, as it does technically look more like the Nova class bridge but it's terrible - far too large and very broken.
I've always liked that bridge from an aesthetic stand point and used it on a lot of my Science ships. From a practical stand point it's nonsensical but that's another discussion.
The bridge I use most these days is the Origin bridge. It's the best made of the "generic" bridge types and I pretty much never see any of the Boff seating issues which show up on the older bridges.
Agreed - although the only thing I would change would be the daft Captain's chair arrangement. It looks a bit silly on that raised pedestal thing.
I really hate the bridge window on it. I think it's silly to navigate a starship visually, having a "obervation deck" as shown in TNG makes more sense. But quality wise it's probably the best, since latest and story-wise used bridge interior.

VOY - Galaxy class and forwards.
BELF - Warships.
