Is there a way to remove double-click to equip?

  You... just don't do it? There is already a viable alternative, and there is also left-dragging the items to their proper slot.

  Yeah, not understanding the OP's issue here.
  
  Can't you just.. not double click on stuff? Maybe I'm mission something here, but not sure why there would be a setting to turn this off when you can just easily.. not do it.

  Sometimes I double click when I open a box and it opens and then equips that item.

  Then, apart from resisting the urge, there isn't much to be done. Plus, items don't automatically equip when a box is opened, unless it's a Doff or a component.
  
  And double-clicks are prominent features in MMO. What you're asking is the equivalent of asking to have your character stop grabbing items when running to them in a FPS.
