Make of of your own interpretations of game ships?
Here's my take of the Temporal Light Cruiser. In story, it's a one of a kind ship. Cassy, who's not officially in Starfleet (think of the third and fourth Doctors relationship with U.N.I.T. from classic Doctor Who) has helped Starfleet a lot in the century she's been interacting with it. Once the Iconian conflict and the issues with the Na'khul had ended, Cassy, who played a large part in it, requested an unused ship hull in return. Starfleet ok'ed it, and Cassy zipped over to Surplus Depot Z15

She selects it and begins to work on it, using her knowledge of alien technology, much of it far, far more advanced than anything the Federation will have for a long time (including the fact the ship, besides the same ole' controls via consoles, it can be controlled via thought, and the inclusion of nano organic technology, the ship is essentially a life form of its own, now, capable of even healing itself, given time). It's also so automated now, that about 3-6 folks are only needed to run it. And the crew consists of, besides herself; her wife, the Andorian named Vanda, a goblin like creature named Bubba (from the same adopted home planet of hers), and a few Metallicans (living robots also from the same home world) and possibly Walter "Doc" Hartford, who was chief engineer of the ship Cassy was 1st officer of. Both Vanda and Doc handed in their resignations (Vanda wanted to spend her life with her wifey, Cassy, and Doc entered Starfleet, hoping for a nice quiet assignment in fancy lab, not on the front lines against Klingons, Borg, and angry time travelers) and joined Cassy on this new ship, the USS Hoagland, named after one of my personal heroes in the ufology/ET phenomenon, Richard C. Hoagland. And NCC-1991...1991 was the year I became obsessed with the whole UFO/ET phenomenon, when I was around 11. It's going to be like a Trek equivalent of the Millennium Falcon...minus the "what a piece of junk!" bit.
Here's how I envisioned the Temporal Light Cruiser in my own eyes:
It would have the same size of the Connie, more or less, and there's more usable room, since the warp core was replaced with a far more superior substitute, a small room where the device is about the size of a breadbox with a monitor attached to it, and a few simple buttons as well as a touch access panel that allows mental control. I also did my best to remove as much greebles and so on, wishing to keep that smooth TOS look, since, to me, TOS ships had the most advanced looking hulls next to the Universe Class styles. Plus I liked how we could never be sure where the weapons were at, since we just saw beams and so on rip out from under the saucer. I am still working out how to do the bridge, heck, I might have the bridge perhaps be where the auxiliary one is located.
But, deep inside the ship, be it the saucer or the secondary hull, Cassy's workshop/lab is located. Her stuff is akin to Washu from the Tenchi anime series,

I don't have any artwork like that; instead, I like to explain away some of my kitbashes when writing stories, especially about Capt. Grunt. His first ship was comprised of parts of all of the free Tier 1s; the USS Hypatia, better known in the Fleet as the "Hybrid" (a nickname along the lines of US Navy sailors referring to the Kitty Hawk as the "Kitty Litter" or the "Sh*tty Kitty"), was regarded as basically a collection of spare parts flying in close formation. She was only still active because during the Klingon War, Starfleet couldn't abandon any ship that was still even vaguely spaceworthy. Later, after Grunt was forced to scuttle her to stop a Borg assimilation, he got the center seat of the mostly-but-not-entirely Constitution II-class USS Bastogne - a ship that had been patched so many times in her century-plus of service that there were maybe three original parts still aboard, known in the shipyards as the TRIBBLE.
(His next remarkable kitbash-ship was one of the four-nacelled cruisers whose class name escapes me; the hull was the elongated arrowhead-shaped one, the upper warp engines were off one model, and the lower warp engines were off another. This happened in-story when the TRIBBLE was sucked through a temporary wormhole deep into the Gamma Quadrant, where the ship was disabled but they found a veritable graveyard of parts. His engineer, Vovonek, was able to lash together functional parts from at least five distinct ship types, including some parts from the Bastogne herself and a computer core from a Wells-class timeship, and they went home in that.)

-- Mercury-Class and variants (Ajax-Class, Daedalus-Class) new prototype (2409) High-Maneuverability Escort. [ex: USS Mercury, USS Firestorm] The first line of Starships designed to not just be capable of entering a planetary atmosphere, but to engage in a turning fight in-atmosphere with the same maneuverability of a fighter, a maneuverability they retain in space. These ships have little in the way of creature comforts, and a smaller crew complement than the Defiant-Class and its variants, but have a metric crapton of offensive firepower, and are the fastest and most agile ships in the fleet. Intended as eventual replacement for Defiant variants as standard tactical escort, though with the popularity of the earlier ships with tacticians they may end up both being replaced by something else entirely several decades from now.
-- Scryer-class stealth reconnaissance ship, prototype development for Starfleet Intelligence (2410) [Ex: USS Monitor, USS Vesalius]. Two launched and 3 incomplete hulls, Intelligence is currently trying to justify the budget for these.
-- D’deridex-class and derivatives (D’ridthau-class, D’Khellra-Class), original out of production but many still in service. New variants current production [ex. RRW Bloodwing/ch’M’R Aen’rhien]. Line battleship designed as the replacement for the Amarcan-class as a hard counter to the Galaxy-class, but was built in much greater numbers than the latter, becoming the mainstay capital ship of the Grand Fleet. Second most-common ship in the Republic fleet due to the massive numbers of Imperial military defectors and the ubiquity of the design in the 24th century.
-- Scimitar-class, command carrier/dreadnought. Tremendously expensive and powerful, this ship is the ultimate warship. Only three in the Republic arsenal, all captured or defectors from Imperial or Tal’Shiar forces. (The main reason the Empire still has a military edge is that they have five Scimitars of their own despite the Imperial fleet being at barely a quarter at most of its pre-Hobus strength.) With a crew in the thousands and an incredible arsenal of weaponry, Scimitars are critical to any Romulan war effort. The Romulan flagship ch’M’R Llieset/RRW Freedom (formerly ch’R El’kaleh/IRW Dagger) is a heavily-modified Scimitar commanded by blue-blooded Commander Tiaru t’Jarok. [Ex: RRW Freedom, RRW Spear/ch’M’R Shianev, RRW Sunheart/ch’M’R Eihss’caevra]
Officially the Republic refuses to either confirm or deny whether its Scimitars are equipped with thalaron generators. Unofficially it’s an open secret that Freedom, at least, does have one.

Krystal doesn't say Lexington gets all the weird assignments for nothing. Temporal Investigations has whole file cabinet dedicated to the Lexington, and if its not mad science genetic manipulation making mermaids or something, its dimensional chaos or temporal shenanigans.
Pretty sure DTI prays they never hear the name Lexington, and when they do... well... they go through quite a few desks.

As for the ship, since I know sod all about making 3D models from scratch, I had to alter existing models....I took a ship a bloke called Madman called Defiant A, and made the support struts invisible and places in some struts from Star Killer's Constitution parts set in place, since I am one of those few who prefer the straight, TOS pylons. I also added red, because white and blue was getting tired, and it felt.....cold.....the movie era felt cold to me, with exception of TMP, of course. I'm doing the Kelvin ships with white and yellow or white and orange, because I feel modern Trek needs warmer, like what TOS gave us. I also wanted to make this ship feel more like a mix between a TARDIS and a very alien construct inside. I'll post the engine room once I have made a few shots and such.
I also wanna make the weapons NOT visible, since this is not going to be a battleship, though it could probably take on, say, Starfleet's newest, best ship with no problem, and to keep the smooth clean aesthetic, since that is what advanced feels to me, not something with stuff all over the surface, for the sake of showing someone on a screen for some slob strapping on a feedbag of buttered popcorn.

For example, I helped StarSword a bit with his series bible, since I'm working on integrating my personal headcanon with his to make a joint universe (Worffan101 is involved, as well). And I have the Romulan Pilot Warbirds starting off as a one-off as a T'Varo Replacement feasibility study, which begin limited production in the aftermath of the Iconian War.
It's called anime style. And my Cassy character is not even human to begin with, so. I'd hate to see you watching some old Disney cartoon or those 90's Batman and Superman cartoons, you know where the men all had big shoulders, square jaws and bird legs, while the girls were all the same face and body, just different hair.

Think of t5's as original models and t6's as a 'refit' or the newer lines...like Odyssey 1.2 or something.
I do that with the "old" ships. For example:
T4 Galaxies are the original ships built during the 24th century of the class of "Exploration Cruisers". T5 Galaxies (and the Monarch variant) are these same ships, retrofitted with modern tech to the degree the old frame allows it (The "Monarch" variant was built parallel to the Galaxy in the 24th century). The Venture-type is a 25th century refit of the old ships, meaning they are the same ships receiving structural refits like TOS Connie to TMP Connie. The T6 Andromeda is the new class and direct successor of the Galaxy, these ships are built from scratch with state of the art tech. The old Galaxies are not in construction any more, existing ones get refitted into Venture-types. The Ventures get retrofitted until they drop out of service, the Andromeda continues the legacy.
Now, with the Oddyssey though - it was launched in 2409. The T6 version was launched in 2410, if we're generous there's maybe a little bit over a year in between. It is completely impossible to design a brand new ship in that time, especially since ships as large as the Oddyssey already existed performing the exact same tasks. The Andromeda for example completely invalidates the Guardian's existence, which had to be designed well ahead of time already...
Either Starfleet is in STO made up of a lot of one-off prototypes or it simply is all over the place

Well, it's not official canon, but it's the next best thing, seeing as that one was dev-written - the Jayne's article on the Odyssey and its T6 variants described the T6 ones as refits and refinements to the basic Odyssey design and spaceframe. (This also explains why the parts are interchangeable ingame, sort of...)
Infinite possibilities have implications that could not be completely understood if you turned this entire universe into a giant supercomputer.
Well, with the game canon or rather lore is pretty much anything a dev officially says. Because if you apply CBS-esque canon policies to STO that would mean not a single one of those little lore snippets that has been posted over the years is game-lore since Cryptic for some reason don't find a way to implement the blogs into the actual game. But they also never defined a policy on STO lore, so I assume anything the devs say counts for the sake of it. Just to clarify, the only reason Star Trek canon is debated at all is that CBS has a very strict canon policy that is disliked by some people who make stuff up. STO has never taken a stance and thus it's just reasonable to accept dev talk and lore blogs etc. as STO continuity.
It's still early for refits, but treating them like variants kinda works, although it's a bit of a far fetch.

Since my captain and crew are unconventional, after the loss of their old ship the Oudenarde (an old Galaxy Class) in a last act of defiance. The crew did not want their old ship rotting in a junkyard so they rigged up a remote control system and rammed her right down the Terran's throats.
The Eclipse is a long range stealth ship, her crew are used to carrying out guerrilla style hit and run strikes a long way behind enemy lines. Current assignments are to infiltrate Terran space and do as much damage as possible before withdrawing back into Federation space.

After the events of STID...the deaths of several star ship captains, Admirals Marcus and Pike Star fleet is on the verge of collapse. After an inquiry several more top star fleet officials are dismissed. Captain Decker is advanced to admiral and made the new head of star fleet. He goes to an old retired star fleet captain friend and asks him to come back to star fleet to take over his ship...the Constellation. After some reluctance he does. The Constellation goes on a shake down when it's asked to investigate the loss of communications with a colony near L-370....this leads them into conflict with the Kelvin timeline Planet killer. After a disastrous first meeting the Connie eventually fires a torpedo down the planet killer's maw covered in Trilitium resin from the warp core. The resultant explosion causes a rip in time space....(and at this time it either deposits them in the STO universe in 2410 or to the Kelvin 2410 where the entire Alpha Quadrant is conquered by The Borg....I haven't decided yet)

I did some thing similar, but the tos story in the Kelvin verse, and using the Yorktown rather than Enterprise.

Cara's main ship, is a, well, it doesn't really conform to any particular class...
The in-game framework, is a Yorktown Class, but the only thing which is Yorktown on it, are the nacelle pylons... The nacelles and secondary hull are Odyssey Class, but the saucer is Sojourner Class (Headcanon reason being an encounter with some Malon fly-tippers trashed the saucer, necessitating a refit, and that was the only saucer available at short notice) It's a Kool-Aid build (ie all polaron turrets, with thr exception of the wide-angle quantum torpedo launcher, for any chump foolish enough to try flying in front of her ) The weapons payload, combined with the structural refit, was reason enough to bestow an NX Prefix...
