Check to make sure you have all the components for the item. There is currently a bug where the items will NOT appear red if you don't have them. This gives the illusion that you have all the required components, but if you directly check your inventory you may find that this isn't actually the case.
And that was it...I had tons of Targeting Interfaces and I.F.F. Beacons, but only a single Electromagnetic Coupling. They were all lit good to go instead of red/missing. Crafted a Coupling and the Start Task lit up.
Checked on another one, and it appears to be the case for almost all of them. Each was just short one of the items, which was still showing good to go.
So the issue is that Green/Uncommon mats aren't showing as missing. Common/Rare/Very Rare all show red when not there, but the Green mats show good to go even if they're not there...
Though, after crafting some Mk VI Arrays - even the Green components showed red when empty. So I craft a single Green component where multiple are required, and that's where it lights up as good to go.
If no components exist, it's red. If you're short, it's good to go even if you're not.
So the issue is that's just checking for the component and not the number of them...regardless of the rarity of the material.
I've had the same problem. I have been working on the ground school trying to build Mk IV and VI items but even with the materials, and the necessary DoFF, the "start task" button remains greyed out.
Looks like we are back to crafting leather armor...
Same problem here. Can't craft higher than Mk2. In fact there are several things I'm finding are grayed out for no apparent reason. On the new character I made for testing this patch all Science and Exploration missions longer than 45min duration are also gray.
Note: This problem doesn't seem to effect my imported characters, just the ones made on Tribble recently.

While crafting some weapons/consoles, all the sudden, the "Start Task"-Button was grayed out.

Besides, this is a picture how it looks like if you don't have hourst to spend for the crafting...
