So finally hit level 50 today decided to see how my escorts performed on a tactical officer and on my first couple PvE runs I died, and I died a lot. Seems so much squisher then my engi captain.
Was wondering where I went wrong and what I could do to improve.

EC is currently my only option don't have much, but I can grind it out. I currently do not have access to fleet stores and I'm currently grinding to gain access to both those and borg gear.
In the couple games I played I tried keeping myself alive as I had zero heals from team mates, who were running a bunch of rainbow beam boats.
If this ship is to squishy what ship should I set my eyes on? I could purchase another C-store ship if that's need.
Also have a MVAE, advance escort, mirror assault cruiser, and a Galaxy X sitting around collecting dust.
I only plan todo PvE currently.

Have you tried an off-tank build? Focus on speed (and thus defense) to make it more survivable?
As for the other ships, both the Galaxy-X and the Mirror Assault Cruiser perform similarly, though one can probably get slightly more out of the Galaxy-X in terms of damage. MVAE, if I remember correctly, is a solid escort thanks to Sci powers (GW1 with CSV is fun).
Basically, it's a trade off for all ships. Right now the Tactical Escort you're using trades some ability to survive for pretty awesome damage. No matter what the ship, you're going to get a similar problem. If you want survivability, especially in PvE, go for a cruiser. The only danger to you then would be the random Borg Invisi Torp if set up correctly.
As stated before, it may also be how you fly it. Being in an escort, you're going to want to pull away from the hot zone if Mobs start targeting you exclusively. Let whatever tanks you've got on your team take the heat instead.
Try the Patrol Escort if you want something less squishy, the Mirror Patrol Escort is exactly the same and pretty cheap on the Exchange.
i personaly do not use RSP for PVE, rather aux2sif...a great heal and resi boost.
gear and experiance will fix your problem. the boff setup seems solid, don't change it.
skills seem ok overall, though 9 points isn't necessary in most of them. 6-7 is good enough and you can get a few more points in the higher tiers.
Driver coil is a waste.
play more passive, son't rush in on enemies...let the other go ahead. when you catch aggro and you see your shields and hull vanishing, RUN!

It's not 2-piece borg + maco shield, but it has more bulk than the set you're using.
If it is mostly borg you're fighting then use armor consoles which resist plasma and kinetic.
Monotanium (highest kinetic resist) and Neutronium Alloy (mixed energy/kinetic) are fairly cheap at the exchange for rare consoles.. Later, if you're part of a fleet you can purchase fleet consoles with extra goodies.
Overall the consoles aren't bad, but grab the above gear for starters and do some looting missions in the foundry to grab some fast cash and upgrade the green consoles to blue Mk XI.
Remember that as a tac you'll attract more agro and have less innate healing abilities so adjust your play style accordingly. With the last giveaway you could claim a fed ship with this console http://sto.gamepedia.com/Console_-_Universal_-_Impulse_Capacitance_Cell
If you claimed it, use it on the defiant if you feel you need a quick getaway.
Later you can use it in an offensive manner as well, but considering this topic i'd say it is best to learn how to stay alive first as a tac.
I feel bad for going into elite STFs and ruining the experience for other users.
don't worry about that...just don't play too aggressive. use the cloak wisely. run away if the situation gets dire, cloak and return back to the fight.

Foundry mission: battleship royal .. something. Lots of opponents and not static targets so you'll have to keep you head in the game.
Forget about practice in regular non elite STF since everything is far too weak in there and you might learn yourself incorrect tactics causing you problems when you go into elite STF.
Embassy -threat consoles. Get them, fit them. Escorts don't tank elite cubes. Let the cruiser faw spammers tank.
Those seem like such a crutch item though? Eventually when I would go to something else I would be lost without them. I would like to eventually do PvP which i know requires a different setup but wouldn't those consoles be a massive waste?
Sadly I don't have doffs equiped don't know what's good to have. As for cycling through defensive perks I usually have TT constantly going and when shields get low currently I kind of panic and hit EPTS, TSS, then if it gets really bad I pop RSP.
