Is there something I am missing here? Don't misunderstand this as a rant against these missions as they feel Klingon in nature and I like that we have them. However the rewards just don't seem worth using. I'd much rather trade the lower crewmen in for a doff of higher value then get the mediocre awards given for them. Now have not done one of these yet so maybe there is an inherent bonus I am not aware of?

Grinding several up to a higher rank of DOFF (5 whites to 1 green, for example) costs you dilithium. Executing them (or allowing them to commit ritual suicide) nets you dilithium. If you have dil to burn (and don't mind being extorted) grind them up to your heart's content, otherwise you could sell them on the exchange for EC.
Of course, there are exchange missions in Cardassian space, once you've done the DOFF chains, which can net you a better officer most of the time.
However, whites for me will always be fleet project fodder

Correct me if I'm wrong but I think you get the same amount of Dil on Fed side when you discharge DOffs.
That said, to get rid of a binded DOff, you can Discharge them (Fed), send them on an Officer Exchange mission or just simply execute them.
