So standard '90 degree' torps, then the most you can fire is, on a standard 4/4 cruiser, three beam banks or arrays and one torpedo in either direction. You could replace the beams with the weaker Turrets and then bring six turrets to bare in any direction with the ability to still fire the torpedos in a ninety-degree arc...
Personally, I'd look into a couple sets of Wide Angle Quantum Torpedos and pair them up with Beam Arrays, you'd be able to fire torpedos in any given direction with a set of WAQ Torps to the front and one to the rear, then you'd have the Beam Arrays overlapping, giving you quite a good field of fire...

Also unless they've changed it, projectile doffs don't work with the Omega torp. On the other hand, with the Omega seems to be glitching with infinite ammo lately, don't really need them.
There is a technique that will let you fire the beams from your rear arc and the front arc torpedo but it only works against large target like the gates, transformer, generators, and cubes. So it is possible to for up to 7 beams and a torpedo.
Beams and torps have different cool downs, so you can fire as many beams facing the target as you like while firing as many torps facing the target as you like, as long as the targets are within your firing arc. Please note the key phrases are "FACING THE TARGET" and "WITHIN YOUR FIRING ARC" (Caps for emphasis, I'm not really shouting). There are movement techniques for getting as many enemies in your firing arcs as possible, and your turn rate and speed (as well as theirs) will determine how long a target will stay in your firing arcs.
