The Varanus is a good ship. I really like to fly it. When I got mine I had trouble finding builds for it too..but it's similar to the fed's DSSV. Search for DSSV builds and adapt it to the Varanus, that's what I did. If you have access, get the fleet version, it's only tier 3 even though its one of the last ships on the list in the shipyard. It has an extra tactical console which helps a lot.
for my Varanus I made it a torpedo boat so I'm using the KHG space set for the extra torpedo damage, but the borg space set is great too. Having an extra tractor beam for ISE is always useful.

I fly a Varanus as my main KDF ship, and I adore it. It's possibly the most stylish-looking science vessel in STO.
I also run the KHG set on my Varanus. Tactical Readiness's +7 auxiliary power does wonders to make up for the poor dear's decidedly lack-luster Auxiliary power bonus, and the extra torp damage gives a nice little bump to my forward DPS when I need to subnuc something.
... that said, I don't run mine as a torp boat, but as a 50/50 split between heal-boat and drain-boat, which means polarized disruptor banks. The power-efficient KHG drives are wonderful for bolstering the gaps that high weapons and aux power leaves, the dish is great for conducting science!, and the shield's proc. is wonderful for helping me stay alive for that extra minute or two for someone to rescue me in PvP. :P
Unless you're planning on running a torp-boat that eschews weapon-power, I'd advise against the Borg set, though. Or, at least, against its shields. Regenerative shields will bite you in the butt if you don't keep very high power to them and remember to micro-manage their faces whenever you come under fire. They're still very nice shields, but might draw too much of your power and attention for some science builds. Just my two cents.
