I currently have a fleet heavy escort carrier + yellowstone runabouts as my bread and butter ship and it's a great ship, can take a heck of a lot of damage in PvP. .
But, playing PvE, it's almost over survivable, if you know what I mean. . So I'm thinking of buying another escort, just for fun and only for PvE.
I'm torn between the fleet defiant and one of the andorian escorts. .
Does 5 fore weapon slots really make as much of a difference in PvE as it does on paper?
Out of the two, which would you pick? Which would be more "fun" to fly?
Bare in mind, this is for having fun and strictly PvE, for PvP, I'll always stick to my fleet HEC!

Fleet patrol escort, fun to fly and with 2x epts and a rsp very hard to get killed in a stf.

I use my fleet Defiant a lot on my tac...switch between that and the fleet MVAM and non-fleet HEC (my fleet isn't tier 5 tactical yet). I stopped using the Chimera a while back.
The add'l damage right out of cloak is nice, but then you can't cloak again until at least 15 seconds (more time if you are still under red alert). So that advantage isn't useful much of the time.
You can get the Steamrunner pack on Steam for $19 til next week. I'd personally pay the old $10 sale price for it just for something new to fly (plus the consoles), but not $19.
Edit: I should definitely mention that the cloaking device DOES NOT come with the fleet defiant. You need to use the cloaking device from either the Z store Defiant or Z store Galaxy X, or else no cloaking.

The fleet sabre caught my eye too. Nice turn rate and inertia. The steamrunner is an interesting choice - nice boff layout. . a place for aux2damp, for faster turn rate.

Depends on how you define "fun" - I define it as using abilities that destroy my foes in the most hilarious ways. To that end, the HEC with the Torpedo Point Defense System (aka "The Button That Makes Everybody Die") is pretty tough to beat.
The Andorian Escort, with the 3pc. wing cannon set, is plenty amusing. I use a Khyzon but the way I have it set up a Charal would do the exact same thing. I don't use it as much as I should, considering everything I've invested into it, but it really rocks in PvE.
Also consider the Fleet Advanced Escort: the entertainment value of an escort that can use Grav Well 1 cannot be overstated.
Or if you really want TacSci for lulz, consider the Aventine (Tac Vesta)

Actually the original poster said that he was lamenting the fact that his HEC could more or less tank everything in PvE implying he wanted something a bit more fragile, and as someone who has the Fleet Saber it is one of the most fragile endgame escorts out there, but it's still viable.
The Steamrunner is alot of fun. Very maneuverable, Cmdr and
Lt. Com tac stations, 2 Lt Eng, 1 sci Ens.
I use 2 DHC up front suplemented with 1 beam array and a quantum torp ( all fleet advanced)
In the rear is a quantum, a turret and another beam array.
It is fittet with CRF3, THY3, BO3, TSSEngines, CSV1, THY1 and TT1
The LT Engines both have EtS 1 in adittion to an RSP1 and AsSif1
The Sci Ens is occupied with HE1
It has 3 Tier III abilities that deal massive damage, the beam overload can break shields while i turn away or into the enemy and the torpedoes use that gap alot. most things go boom in one pass.
Against targets with higher defences i use TSS Engines to slow them down, the Cannons than can do even more damage.
The ship is equiped with a graviton pulse and the omega Set with its gravimetric anchor.
So defences against me are always low.
When it comes to consoles it uses 4 phaser relay XI purple, assimilated module, tachyokinetic converter, zero point energy conduit, rule 62 console , plasmonic leech and the aformentioned graviton pulse.
The warpcore is a purple mk XI fieldstabilizing core with engine capacitor, coil, reduced slipstream cooldown and aux to weapons bonus.
Doffs are 2 purple conn officers, 2 projectile officer and 1 exocomp
Important for that built is at least 3 points in flow capacitors, full points in projectile weapons and alot of points in engine performance and manouvering thrusters.
I tried most escorts but the steamrunner is imho the perfect blend of firepower, survivability and mobility.
Most other escorts are either fragile or rather specialized. The steamrunner can do it all, pure cannon escort, beamboat, torpedo boat or a mix like my ship.
Its evil, imho looks great and not everyone and their mother is flying it.
I got the Charal escort myself and man... Talk about difference! Although I've been leaning towards the Fleet Advanced Escort now. For a little while now I've been putting on the tractor beam mines and swapping the universal boff to a Science type BOff!!! 3 Adv.Fleet Tet DHC's 1 DTBB and a torp of choice; 4 Tet tac consoles... I basically fly up to the mobs and fire away, then scoot if needed - which isn't very often; albeit the characters I have with them are Engineers. I've also looked at the defiant type, but 'looking' at the Fleet Adv Escort - it seems to be better on 'paper' for me anyways.
But lately I've also been running around in the Fleet T'varo... Yikes! <VBG> It's Tier 1 and light years ahead of the Charal - albeit - it's for a Romulan types. The Dreadnoughts are a totally different species/learning curve, still learning!
My preferred beamscort is the (Fleet) Heavy Escort Carrier, partly because it's a pretty tough ship when built for that, with a strong hull (for an escort) and Lieutenant Commander Engineer. Plus, Akira.
2x APB, 2x FAW is the key to beamscorting. Keep those tac buffs running constantly.
The HEC really does have the look for Beams, it looks so very right.
I just got mine and I'm loving the thing, especially the Torpedo Spam console.
Have you considered something other than an Escort? A Cruiser (Assault R Beams, Excelsior Cannons) what about a Carrier. Anything but the Atrox. Maybe roll a Romulan and try a different play style?
Have you worked on getting the Risian Corvette? Could be worth trying it's light weight at 27k hull and has a similar BOFF layout to the HEC. Also it comes in like 8 colours before trying shields.
If I was to choose between TER and Andorian I'd go the Andorian, not knocking the TER which is a terrific little ship, but the Andorian has more things to play with on it. And it's meant to be a Glass Cannon.

If you define fun as I do crushing everything in PVE then go for the Tac Kumari. Properly kitted does INSANE damage. Buy the 3 piece set and the quad cannon. Trust me, you will not use another ship for PVE. You will move all your fed characters over because you will start to think any other ship is pointless for PVE. (I have both my eng and sci in TAC kumaris now too.)
I have the tac Kumari.. it is a glass cannon, but when you get the tactics down right.. this thing just MELTS Elite STF's I didn't buy the set so the only thign I have is the wing cannon overload.. it is fun. Things go boom.
I also use a nanite disruptor build.. but the skill planner doesn't have nanite disruptors on it so I made one with disruptors to show the build basically the same though.

I had considered changing loadout rather than ship - A beamscort is broadsiding with single beam arrays, rather than fore DBB beams correct? That could be fun with FAW up constantly, particularly with torp spread 3. This would allow me to hit more targets, as scatter volley is 3 targets max. Then I'd just have to have two sets of BOFFs and weapons for PVP nd PVE. Now, with three purple doffs that reduce EptX cooldown, I'm running full uptime of EptS 3 and EptW 1 (Which gives 10% energy damage for 30 secs) I believe the 10% energy weapon buff from EptW is applied on top of everything else, so it's better than a fifth console.
I think a few of you have got it right, that what I'm looking for is more a glass cannon, hence why it was a toss up between the tac andorian and the fleet defiant. I wouldn't want the three pack, as I'd strip the wing cannon out and put in my own loadout and consoles. Isometric charge is a key part of any of my builds and I'm specced for it, so wouldn't want to change that.
What about tac andorian with DBB? With constant up time of FAW and maybe torp spread 3, more targets than the max of 3 of CSV.

the DBB i use with BO2 it has a decent spike damage and melts the shield facing pretty quick.
