So finally I managed to work my way up to 800 lobi Crystals and I'm trying to figure out which ship I want to pick up, I have a couple of options, but looking for a few pointers from those that have played the ships.
This would be for either my Science or Engineering Captain.
Right now I'm torn between the Tal Shiar Adapted Battle Cruiser and either the Jem Dreadnought or the Tholian Carrier. If I go Science I'm kind of leading more towards the carriers, as I already have the one Jem'Hadar console from the Heavy Escort Carrier, but the Tholian Recluse looks attractive as well with its higher shield modifier.
How is the Tal Shiar ship? I'm thinking that would be a good fit for my Engineer, but welcome any thoughts. Mainly this is just a ship for STFs and Fleet Events as I don't PVP at all. Between the 3 of them which is the best for damage output and survivability and can you equip dual cannons on the battle cruiser?
I can't answer your questions, but I can offer my own experience.
I recently bought an Orion Dacoit Flight Deck Cruiser for my KDF officer. It cannot equip dual cannons but is pretty fun to play. I also bought a Flight Deck duty officer from the exchange who gives my fighters a 5% damage bonus when they're in Escort mode. I discovered the Orion Slaver fighters and bought those. They're supposed to "earn" me credits and commodities but I haven't really noticed that yet. My Dacoit handles like a cruiser, so I'm slower to destroy enemies than an Escort. I arm the front with 2 single Cannons and a Torp Launcher and the aft with 2 beam arrays and a mine launcher. I briefly experimented with a Piercing Dual Beam Bank I was rewarded from a mission but it was disappointing. Cannons seem to punch both shield and hull well while beams seem to do best damage to shields and not so well on hulls.
My Bridge officer abilities are vital to destroying a target. My character concept is a pirate and I love using Boarding Party from my Engineer Bridge officer. It has 2 Engineering and Science stations and only 1 Tactical station, so I'm making the most out of those officers.
I bought the Dacoit when I hit level 20 and I'm still using it now that I'm level 32. Of course, I upgraded everything when I ranked up. If I can afford it, I plan on buying the Marauder Flight Deck Cruiser when I hit 40.

On the little blue specifications window on the right, under weapons, it reads Can Equip Dual Cannons. But, you know how details and typos can be in MMOs.
That depends on you - have you played Carrier on KDF side? If you have not, I would suggest you try it before you say yay or nay on carriers. Vo'quv is free, but a good idea as to how carrier should function.
As a carrier flyer (vo'quv and HEC), here's how I feel: Carrier is about transforming your support based power, be it eng, sci, or tac, into 360 degree attacking power. That means your main job is to provide covering fire, APB etc, while keeping yourself alive.
So if you are more of a head-on attack kind of person, then carrier may not be the best way to go, since they have the same turn rate as D'D. However, unlike D'D, you have a much better attack zone due to the pets, and if you would rather just focus on keeping yourself alive and let the pets handle all your attacks (which is my playstyle), then carrier would be better.
Decided to go with the Jem Dreadnought, just felt like a better fit for my Engineer who needed a good lock box ship as I am still saving up some ECs for Fleet Modules. Don't have it geared out yet but it seems to hold its own pretty well. the jem dread is a very good tanky ship in the hands of an engineer. and because it can use cannons gives decent damage output as well.
the jem dread is on the level of fleet ships so you shouldnt need to have to get a fleet ship (aint no carriers currently fed side fleet store.)
if your running polaron weaponry, i'd suggest getting the jem hadar set and getting the mk XII upgrade. since it gets the special buff stripping bonus for running polarons, and the mk xII set has a bigger stat bonuses for polaron damage, get a couple polaron tac consoles and it can be quiet deadly.
The Dreadnought is a very tanky ship, consider running an Aux2batt build. The reasoning is it basically reduces the cool down of the Dominion Command interface down to 45 seconds (two copies of aux2batt and 3 techs). Also I believe you will want to slot in AP:Omega1/AP:Omega3 for the turn boost on that.
