Currently I have a Kamarag Retro, Mirror Vo'quv, and Standard Vo'quv as my T5 collection. I placed my Jem'Hadar set on the Mirror Vo'quv and mount polaron single cannons and beams, while I placed Breen Set on the Kamarag, load it up with 2x RCS consoles, A rapid fire transphasic and a cluster transphasic at teh front while the rear carry a transphasic torp (round out by disruptor DHC at front and turrets at aft of course).
I am expecting reachign T5 on the Omega/Romulan reputation in about three weeks, and will accquire either the borg set and/or the Adapted KHG.
So here's the question: What should I do with the Jem'Hedar and the Breen set? Should I keep them, put it on a different ship, or throw them out?
The Jemmy set is worth hanging on to just for the bonuses it gives to polaron weapons (especially when used on a Jem'Hadar/Galor ship and you have the Mk XII version). I can't find anything good to say about the Breen set; the transphasic bonus is nice, but they're still some of the least effective weapons in the game and the energy dissipator doesn't work all that well.
If you have the space for them on an old ship, just park them there. It doesn't hurt to have spare gear to experiment or mess around with. Heck, some days I fly around in a rainboat just to laugh at the min-maxers who get their knickers in a bunch just because i'm not "fully optimized".
Otherwise just sell it, if you ever want it back it won't take long to redo the 3 Breen Missions.

Up to you, really. They're not difficult to re-acquire from the missions should you choose to dispose of them. Alternatively, consider them for your shuttle-of-choice.
As for the Breen set.. Amusingly enough, I decided to do a little experiment with sticking it on a Chel Grett with a full transphasic torpedo and mine setup. The results were fairly amusing.. nearly insta-gibbing Negh'Vars in cure space with full shields and severely crippling ships by stacking both the set and Chel Grett console energy drains.
The damage output was actually fairly comparable a plasma torpedo boat build I use on a Vesta that eats elite cubes alive. However, the survivability isn't even remotely close - this is the Breen set's biggest shortcoming. The ship's shields leaked more than my Tactical Bortas' with four spheres buzzing around it.
With the breen set, only the two pc. bonus is worth it for the transphasic bonus. So use the breen deflector and engine(great engine) with a shield array of your choice (preferably something resilient). I usually use the Maco mk XII shield. That greatly improves survivability.
If you are using polaron or phased polaron weapons on anything you'll at least need to be using 2 pieces of the Jem'hadar set for the polaron damage boost they give.
I have a polaron beam array based Fleet Tor'kaht battlecruiser I use that pulls 10k dps consistently. The parse log is in my sig.
I've recently been playing around with a Miirror Vo'quv. I drive it like I would an escort for the lulz. With the Omega shield+deflector, t5 romulan engine, rom plasma weapons, lobi consoles, rom embassy consoles, and t5 very rare elite scorpion fighter pets i've gotten the ship's dps to over 7k now. I'm still tweaking the build though.
If you want some blow your mind from what you were thinking and be an IKS Money shot... heres what you do:
Get these from the local hardware store...
Plasmonic Leech, KHG deflector and engine, the adapted khg shield, 6 polarized disruptor beams, and your standard disruptor consoles and damage resist engineering consoles, and stock up the shield capacity and flow capacitor consoles.
Then for your sci powers get energy siphon 2 and 3, and target shields 3, and then get anything else you want for your style to stay alive.
After you put all this together you can say thank you thank you i feel unstoppable now. The mirror vo'quv tho from my testing does a lot better with this energy stealing setup with its boff station layout than the dilithium one.
