I want all ships to have a much, much, much greater crew death resistance, no matter what ship or build I use, Borg torpedo spamming brings down all of my crew in 2-5 shots. Also buff crew regeneration, substantially.
Have you been using Brace For Impact and other abilities to help keep your Crew alive?
STO is about my Liberated Borg Federation Captain with his Breen 1st Officer, Jem'Hadar Tactical Officer, Liberated Borg Engineering Officer, Android Ops Officer, Photonic Science Officer, Gorn Science Officer, and Reman Medical Officer jumping into their Jem'Hadar Carrier and flying off to do missions for the new Romulan Empire. But for some players allowing a T5 Connie to be used breaks the canon in the game.

Yes I use brace for impact III and it doesn't matter because the cooldown is TRIBBLE so they just spam you to death before you can even respond, Borg are so OP, they spam torpedoes way too much, energy weapons are too powerful, and they can fire invisible heavy torps.
You guys must be fighting tougher Borg in Elite STFs then I am. I'm not having huge problems with crew loss. I mean I lose them, but seldom do I drop to 0 - at least not that I've noticed it causing me problems.

I fly the Oddy Operations and I even use hull plating to resist kinetic damage, 2,500 crew drop to 0 in 15 seconds of fighting spheres or a cube. And because they spam so much you don't have a chance to regenerate your crew, spheres are also very OP, get 2-3 of them on you and you're screwed, I can solo any cube but spheres are nonsense.

Have you installed a Shield console? :P
Might want to grab some Mk XII Common consoles of the following to play with, to see if it helps:
Skill: Starship Armor Reinforcements (Physical Damage Resistance) ...This would req. a Respec to change.
Console - Engineering - Monotanium Alloy (Kinetic Resistance)
Most people don't bother with the following because the crew doesn't see to affect them much, but you can try these:

Honestly it doesn't really matter. My Vo'Quv can go from 1K crew to 0 in matter a seconds.
Nothing new. The crew system is useless for now.
Indeed.
The crew system has been a basically worthless nonsensical system since the game launched. It needs a major overhaul or should be removed entirely except as a cosmetic item.

It currently is essentially just a cosmetic item. I think it needs to stay that way.
The best thing to help ya out would be a Very Rare (Space) Nurse DOFF, I swear it's like she has a conveyer belt set up in Sick Bay where all the injured crew just get on, patch up, and get kicked right back out into active duty in a matter of seconds. (I believe she gives +200% Crew Regen when your below 75% of your total crew)
Fell free to drop me a line for anything! @jonnyreload
The only thing that bugs me about crew getting taken out is it raises cooldown on boff abilities.
If you're REALLY concerned about your crew use the Jem'Hadar shield and a biofunction monitor, you'll never have another crewmember die, just get injured. Doesn't help much with ships that have overly bloated crew counts like Carriers though, still takes forever to regen them.
I use the mark 12 jem shields; my crew survives much longer, especially when I mix in BFI while taking heavy damage (or when I'm the target of some crew killing abilities, like a borg KCB).
But without the added resistance from the shields, yeah, it's almost not worth even bothering trying to keep them alive; even if BFI saves some, they'll just die shortly after the buff expires.
