I for one wish we could play as non-humanoids. Maybe something with multiple arms and/org legs.
I can see why we can't but it's still a shame seeing as we had a platform to finally see some variation in the races in Star Trek.
Yes...there is that canon rule on humanoids. They all have to basically look human. But who's to say other forms of life did not arise in the galaxy? Look at the Tholians. They are not carbon based at all.
Also, species could arise from other galaxies. That /is/ canon.
The main reason is development costs associated with retooling all the uniforms to work with quadrapedal, tripedal, tetramandal, trimandal, etc. It's a lengthy endeavor without much of a payoff.

They're not usable in any functional sense but I've seen characters with odd appendages and moving on all fours at times.
it really boils down to art budgets for costumes and animations. There's only so much time and special projects like Caitians eat up a lot when new tech is added (i.e. Caitian tails animate and had to have work done for sitting down emotes). This is the biggest hurdle facing the team: a question of when, not if. Prioritizing the workload for, say, Iconians in upcoming series might eat away from long-term budgets for the multiple appendages suggested.
Hopefully, Cryptic hires another programemr to ease the strain on the current ones (programming is a big bottleneck: with demands for minigames, new endgame features, territory control, etc.)
in star trek, whilst they always hinted at non humanoid life, we never really saw it. people are not used to seeing anything other than humanoids in star trek (outside of occasional bad guys) how would you feel if some 7 legged thing came scuttling down earth space dock before stopping off at the tailor? does it cross the line? does it kill immersion? does it stop being star trek?
some people lose their composure if they see an nx class fly past them. how will some react when larry the horta rolls past? is it worth the hassle for the devs to do.
im somewhat undecided myself whether i would like it or not. it would be interesting to see how people feel about it.

Nobody wanted to put the money into the costumes.
