What classes would you expect the various Captains from the series to be?
We know Janeway was a Science Officer, and we can expect Picard was too (he wore blue and was an astrophysicist in "Tapestry").
What of the others?
Let see. Kirk would definitely would be Tactical. Archer is a tough one to call. His father worked on the Warp 5 Engine project. He seem to carry on with the project after his father died. He was one of the test pilots of the NX prototypes. The classic test pilots in ral life from the 50s and 60s had a lot of Engineering training themselves. And that's how I see Archer as, so I guess I would place him as an Engineer.
I always took Picard for a hot head tactical officer early in his career until things like losing his heart to the Nausican in the Academy and then having his best friend Jack Crusher die under his command on the Stargazer caused him to see the world in a different light and pursue his love of the sciences.

Picard was tactical. The whole point of Tapestry was ... he backed down off of the Nausicaans, and then ended up middle management ... and in sciences.
That was a WHAT IF.
In reality, Picard took the Nausicaans on fists flying. Got stabbed in the heart. And became a tempered blade of pure resolve. Tactical. Command. Decked out in Red.
I'd have to stand by the assertion that Picard was a Science Officer. I mean, to be assigned as one, he would need the education provided by the academy. Further, we know Dr. Galen was a teacher of his, and Galen was an Archaeologist.
Archer - Never watched the show, so I can't say.
Pike - Hard to say. Strikes me as a Tactical Officer, though. Fairly rigid and military.
Kirk - Engineer. We've seen him do some pretty technical things on the show.
Harriman - Who knows... Strikes me as an Engineer, he was overseeing the ship's construction after all.
Garrett - Struck me as an Engineer, too.

Sisko - Tactical, though you could make an argument for Engineer, I think.
