Presumably, Borg characters would be flying Borg cubes, and wouldn't need to assimilate them. On, the other hand, Liberated Borg characters are no longer part of the Collective, and thus don't do the whole assimilate thing. They kind of get over that when they leave the network.
However, if you follow the game's story, the Borg now assimilate intact trees, planets, buildings and starships.
So you could have a "Liberated Borg Galaxy Class Starship" in the game's setting. That kind of thing. Borgified starships likely do exist.
I'd pick up a "Liberated Borg Defiant Class" ship.
Something like that will inevitably be in the c-store, I bet.
Probably not for a Galaxy or Defiant though since Cryptic only pay attention to t5 ships.
This, unlike a lot of what Cryptic has put in (no I will never get over Klingon Joined Trills!) actually has precident in canon, the Voyager was temporarily Borgified in a couple of episodes for instance while still being under the control of Janeway.
