I was recently told in a condescending manner that these are assimilation tubes, however, since I am not actually being assimilated, I will refer to them as stun-cables.
So on to my reason for the post:
Is there anyway to defend against these? Except for not standing in place (which I dont do)? Because when you get surrounded by three or more borg getting all stun-happy, then you might as well wait to die... or if youre very lucky, you get a chance to knock them back.. harmonic pulse (I think its called) seems to get resisted alot... and against borg it has too long of a CD to be as useful.
Also, I think borg are the murlocs of STO. You can have five in a group, but seconds later I swear the number increases to seven...

Borg DO call reinforcements - not photonic ones, but real ones - so you're not wrong.
The "stun-cables" as you call them are shared by Dominion Founders as well - AFAIK there really isn't a defanse against them except don't get surrouned and roll a lot. BOs don't seem to get affected very often by 'em unless your captain is incapacitated, so what I do is kite the Borg and let my BOs go to town. Doesn't always work, but when it does it's beautiful.
Phaser and disruptor exploit weapons also work well against BOrg - compression pistols, sniper rifles, etc. Tetryon - not so much but still work if you iuse sniper rifles, in my book polaron = useless, and haven't tried antiproton yet.
Yes I never use polaron ground weapons... I too found that diruptor and phasers work the best against drones... last night I have a mk ix tetryon pulse rifle and felt like I was spitting on them. Then I had a phaser split beam rifle drop, the difference between the two were quite drastic.

Condescending manner It wasn't my intention to be condescending...it just struck me as odd that you would do an entire write-up on how it doesn't make sense fluffwise for feedback pulse to effect cannons (to which I agree, but in this case gameplay > fluff imo) but didn't recognize assimilation tubes. I guess intended tone does not always translate well in text form.

To defend against them, don't let them get in hand to hand combat. Move away from them while firing, use knockback skills and snares/holds to keep them away from you and your away team.
My favorite anti-borg weapon is the High Density Beam Rifle, its secondary attack does a guaranteed AOE knockback, very useful to keep the borg at a distance. Still, it can be tricky if you don't maneuvre well.
On your second point; some Borg groups beam in reinforcements. So you will be fighting 7 of them
Well you do get a debuff that, when you hover your mouse over it, says "You are being assimilated" and you continuously take (heavy) damage as well for the duration of the effect.
The "stun tubes" apply a hold and a DoT that's called assimilation. It's just that we fall unconscious at zero HP and not get a forced race change. So they are the new assimilation tubes.;)
I have all of my away team using anti-proton weapons. My captain uses a compression pistol, my science officer a stun pistol, my security officers a blast assault and a sniper rifle and my engineer a split beam rifle. It works well, most of the time. They often use the tubes on my BO's, but my science officer keeps the damage at bay. The best defense against the cables is distance. Never stop moving and run whenever you can. That's the big advantage of the compression pistol. You can use the secondary fire-mode while moving.
I just recently (as of yesterday), achieved RA5, so I dont have tons of explore marks yet. So far I have an antiproton array for my ship, and I went to bed last night before I spent my next batch of marks... Was trying to figure out what type of gun I wanted when I decided I was too tired to stay up anymore.

CORRECT! There is a debuff indicator which appears under your health indicator and gives a percentage of assimilation. A Mk X Bat'Leth is excellent for close-quarters knock-back - very slight recharge - then you can decide to stay and chop or retreat and zap.
Oh noes butt hurt, let's make a thread to call the ****er out about it!
...
Now regarding an assimilation defense; best way to protect against it is to keep the Borg away from you, use a Force Field Dome, Shield Wall, or just keep moving. If they get close to you, melee them, use weapons with knockback or repel etc. Or have an engineer next to you with the Support Technician kit or something similar to "cure" you if you get rooting with (As I recall) Engineering Diagnostics or something... (Carry hypos to cure the DoT though).
Part of the Problem is, that 'Assimilate' inflicts Physical Damage(bypassing Shields) and players usually dont have good Resistance againt it.
The Reinforcements are called by Tactical Drones, if I'm not mistaken.
Medical Drones heal others, obviously.
Um, well, as with all NPCs, if you dont want to much Attention, dont shoot first, send your BOs in.
As I noted above, I wasnt being actually assimilated, but only stuned. Which is why it didnt occur to me that they were trying to assimilate me.
The Combat text says Assimilation attack. So it's an assimilation tube 30+ years removed from the Borg seen in Voyager "Endgame". The Borg do learn and adapt. And so does the Federation. They've the experience expertise the 'Doc' (The EMH from Voyager) and Seven of Nine in dealing with Borg technology, especially the Borg Nanites. The Federation has countered the assimilation aspects of the nanites, but apparently haven't overcome the "chewing up of you insides" totally (the DoT of the attack).
The hold from Assimilation can be countered some abilities. Motion Accelerator from Tactical nicely counters the Hold but it's not up 100% of the time. And a high tier Science power, which I can't recall the name of , removes all sorts of debuffs which includes the holds.

Hand to hand? At least half the time the sodding things hit you from over 5m away! I call that a ranged attack
