Ok, setting the critiques on Ground Battles aside, can someone please tell me how come I can't use some pistols as dual pistols ( one on left hand - one on right )? I can use certain kinds together on each hands, but some type of pitols won't let you use any other pistols on the other hand. What's up with that? I must be missing something obvious to make it work, so feel free to let 'er rip on me. Thanks for any replies on this.
I think that's only a graphic issue. If you e.g. use a laser dual pistol as primary weapon and a disruptor dual pistol as secondary pistol you will see both pistols spitting laser bolts but damage calculation isn't affected from this.

Yes, I have 1 of each of those and it worked as you said, but I was trying a plasma pistol and another type of beam pistol and it wouldn't let me do the same. I just thought a pistol is a pistol and should be able to be use one on each hands, left and/or right. Agree, folks?
Dual Pistols are a specific type of item, with a specific Secondary attack available to it (Bolt Spray - an Expose attack). The game is currently not coded to recognize main/off-hand weaponary, and most of the animations are assuming to be firing one set of weapons in sequence at the current time.
Live with it until they decide to change it (doubtful, as there could possibly be a few balance-related issues with that, given the way weapon types are set up).
Double pistols are a "set" you will see the word "Dual" in the name of the weapon if it is a 2-hand set.
Yes, am actively looking for only those to collect now since it's pointless to be using a single weak one handed pea-shooter. Some of the elite baddies who's hard to kill use dual rapid fire plasma or disruptor pistols and I thought .... hmm.. I'd like to do back the same if I could.

You... realize of course that every weapon in the game at a given Mark (WARNING: This applies only to Ground Weaponary) is coded to give the exact same amount of DPS in Primary fire mode, and the only thing that really adjusts this is Secondary attacks that may have higher or lower DPS (Most AoE attacks tend towards the lower end of the scale), right?
EDIT: Forgot that this also only applies to Common (white) quality weapons, as some secondary effects (DoT, Crit Chance, Crit Severity) can over time affect the total dps given the weapon, but since every Ground weapon is given equal opportunity on this kind of adjustment it's fully balanced and doesn't change the original statement any at all. A Rare (blue) quality Wide Beam Plasma Pistol has the exact same base DPS as a set of Dual Tetryon Pistols, minus the adjustment between the secondary effects of both weapons.

There's no official Starfleet weaponry manual I could find on the different specs on the type of weapons, etc.

As was stated earlier, the "dual" pistols are actually one weapon. The one in the picture is called a "Dual Tetryon Pistols" (I think). This was my favorite while leveling up to about capt. They look cool when you shoot and the tetryon does nice damage to the shileds of your enemies.
If I recall this pistol set has an exploit. I always use one weapon with an exploit power, and another with an expose and I switch back and forth (it also helps to remap the keys). Use this method and you can leave the away team at home.
S'not so much a 'science' as it is rapid observational data. Sorry for coming off as a bit of a jerk (or, to be honest, more of a jerk then intended), though, as that really was probably unnecessary. My most sincere apologies.

But, as a player-edited resource, it's only inevitable that someone will fill it in at some point (I lack the wiki-fu or the time and self-confidence to do it myself), and something like that is probably best left up to personal research.
However, what I can tell you is that there are two things that determine a weapon's stats: the energy type (which STOWiki does have a full list of) and the weapon type (full discussion on starship weapons, none as of yet on ground weapons). You will encounter different Energy types as you progress up, but you can see all of the available Weapon Types now (though sometimes they have slightly different names) in the Lieutenant-grade Phaser/Disruptor categories.
