Go to the Memory Alpha website, an excellent source of Trek information; and put in the name of the weapon you want information on. In the entry, it will most likely tell you which races developed and used that weapon type primarily.
Klingons -> disruptors + photon torpedoes
romulans -> Anything plasma based
Hirogen -> tetryon based
Krenim -> chroniton based
Dominion -> polaron + antiproton based
Cardassian -> plasma based (or should be)
federation -> phaser + torpedo
Borg -> disruptors + graviton based (dont know if graviton is a viable torpedo type, but i've seen them use plasma)
that's the basics of it all, at least what they _SHOULD_ be using in the series, dunno if it's true or not

Romulans/Remans - Disruptors + Plasma projectiles (occaisional photon too)
Hirogen - Tetryon + Transphasic
Cardassians - Phasers + Photons
Terran Empire (mirror universe) - Phasers + Photons and occaisional Quantums I think
Jem'Hadar - Polaron + Quantum projectiles I think? I forget
Borg - Plasma all around
Undine - Antiproton + Plasma projectiles
I haven't seen any NPCs use chroniton projectiles or tricobalt devices. Other than that, all weapon damage types are fully represented by enemies.
