Beyond that, Apollo and presumably all of Greek mythology stems from aliens from Pollux IV according to TOS: "Who Mourns for Adonais?" This would seem to suggest Minotaurs are real in the Star Trek world.
On a Trek related note: Michael "Worf" Dorn voiced not only the Minotaur in Disney's Hercules but also the majority of Tauren in World of Warcraft.
