For me, clunky is not something I like. It's soooooo ape brain ish. Small, slender and elegant I prefer. For me, less is more.
Excelsior original I prefer, along the other simple stuff.
What I like is actual functionality in design. For the B, the extra hull structure actually makes sense functionally: it's a design reconstruction. Compare the British Queen Elizabeth-Class Battleships in 1918 to how they appeared 20 years later; they're massively different, to fit new equipment, weapons, protection systems, etc. Same for the Enterprise-B. It's a modernisation package for the Excelsior to bring it up-to-date with more/newer/better/advanced equipment. Same for the Gal-X and the Venture-refit for the Galaxy-Class.
I love that. You don't always need a completely new frame to create an up-to-date capital ship: sometimes you can just build on designs you already have, literally. The Ent-B/Lakota Refit for the Excelsior does just that: it builds on top of the original ship to bring it up-to-date, instead of sinking all the resources inherent in a brand new design. For a start, they already know the Excelsior-Class works, so they don't need to spend years testing a prototype before going to full production (which seems to be how Starfleet operates).
