Like you can access engineering and crew deck on Klingon and Romulan starships, but you can't do it on Federation ships.
What are you talking about?! Fed ships/bridges have turbolifts, that can bring you to Engineering and crew deck. In fact, that used to be a complaint, few years back, that Fed interiors are massive, regardless of ship size, and are always the same (regardless of the bridge installed).

It depends on which Federation ship and bridge you choose, actually. For example, if you choose the 31st century ships and their default bridge, you can't access the rest (at least at first).
But you're right, normal Federation ships even have 4 possible interiors:
-the default one that comes in various sizes
-the Connie one
-the Defiant one
-the Voyager one

You're right, I forgot about the 31st century ships. Defiant has Belfast bridge (C-Store), and there are 2 types of Voyager interiors. Come to think of it, the new Intel dreadnought (with the hole in the middle) has its own unique bridge too (with no access to other departments). I have the Connie interior as well, but the T1 one (does the T6 Connie have a different bridge?).

Yeah, the Konnie also has a unique bridge. Same with the D4x and the T'laru. But they don't have an interior.
Which is sad, especially for the T'laru since that's the only other true Romulan bridge.

Wanna know a secret?
EDIT: I assume you grabbed one of the rare Fed ships that don't have an interior.
