Okay I'm kind of a traditionalist when it comes to what my ships run in terms of weaponry and the like. I'm running a Jem'hadar carrier and was wondering if I am hampering myself If I only use polaron weapons. Secondary question are there polaron torps available?

The second question? No. There are no polaron torps. They use quantum torps.

Now, this doesn't mean that Polarons are far from "effective", though now we have to play "question and answer" to see what would work, since there's essentially two "brands" of Polaron out there...
Most of the "older" Polarons, and "polaron based" weaponry, ran with the drain proc. Therefore, they are better used by someone who has high flow caps.
The DSD introduced Polarons with the drain proc and a damage proc (proton damage) - though it's hard as heck to maximize the proton damage...
"Newer" Polarons, like the Thoron ones, have radiation procs instead of drains. These are used by people who maximize radiation and/or exotic damage.
As to your second question - outside of the Antiproton energy torpedo that came from a Crystalline Entity event in the relatively recent past, no torpedoes exist that "leech" off an energy weapon type.
