Re: What voice actors would we like to see?
Kate Mulgrew as Janeway still tops my list. Also, given that Chakotay is supposed to be the head of Starfleet Intelligence, which plays such a prominent role in DR (and gave us all those cool new ships!), Robert Beltran makes my short list now too.
As for non-Voyager actors, LeVar Burton as LaForge would be my first choice.
Re: Has Delta Rising inspired us to do any Delta Quadrant Foundry missions?
Though my next project will be a KDF trilogy (more on that below), I do have a few Delta Quadrant-specific standalone mission ideas in mind. The one most fully formed is tentatively called "Vectors", which would deal with the "Resolutions" virus infecting an inhabited world, with allegories to the Ebola scare. Other stories I have in mind are about the Dominion searching for a Founder (one of the Hundred) in the Delta Quadrant, and even one based on a spec script I wrote for Voyager back in the day (though the mission story would be quite different from that of the script).
Re: How do we prepare to make a Foundry series?
I start with a rudimentary framework - how many parts, a general idea of how I want the series to end, and a general idea of what I want to do in each individual mission, and how that will advance the overall arc. Then I start writing a rough story draft, and then refine that further into a story treatment broken down by each map on each mission. This is what I am presently doing with the Twilight of the Gods trilogy. In terms of story-writing, I've already finished Act I and am getting close to finishing Act II.

Budget Starship Challenge:
Using a budget of 25,000ec and 10,000 dilithium, you will need to purchase a starship. You may only purchase a ship that is tier 3 or below. Then, using the remains of your budget, you must upgrade your choice of starship to the best of your abilities for a round in a special foundry made testing grounds. Points will be awarded for every photonic ship you destroy, and points will be lost every time you are destroyed. The winner will be the one who scores the most points under a 10 minute time limit.
(Obviously, someone will need to build the testing grounds and have fun doing it.)

Points will be awarded for every ship you destroy, and points will be lost every time you are destroyed. There will be a 15 point award for the one who lands the finishing blow to the Crystalline Entity (assuming you get that far). The winner will be the one who scores the most points under a 12 minute time limit.
