Would it be do-able for speech options to be made for certain races, like starting a conversation with an NPC with something a Ferengi, or Tellarite, or Gorn player would say?
In my opinion, it sounds like a LOT of coding would be involved. And I don't think it would change gameplay much (if at all). So why include it?

Technically, not much. Since lor they have a tool where they can see the PC race, and react accordingly.
But it would still be some writers work to set all those dialogues, and I don't thing it would be so important. How many Ferengi or Gorn do we meet ? The only important Gorn I remember is the ambassador, as for Ferengi, there is that woman in the 2800 arc.
There is also that Ferengi that we can punch. Best character ever, giving me one of the best feelings in the game.
As to OP.
For Federation, we don't need that. We don't play a species, we play the Federation. It would basically be the same as playing Call of Duty, with specialized dialogue for somebody from Texas, Alaska and Maine. In the end, we all belong in the same faction.
For KDF, some small variaion could be desirable. An Orion will not respond the same as a Klingon. And KDF dialogue is now written for Klingons, or for the occasional Alien player. Not for Gorn or Orions. This could be a vast improvement.
For the Romulans, this tool is already in place.
So for Fed I won't support, for KDF I would. Fed is too generic in its very nature, while KDF should be more diverse in my opinion.
My thinking would be that it should be like how Elisa Flores talks to a Vulcan player about the speech before leaving earth differently as opposed to other players species. Also that a Klingon NPC would be expected to respect an Andorian player more than, say, a Bolian one.

Exactly. It's the little things that count; small changes like that improve immersion and make alts more interesting.
I believe during Surface Tension there is actually a [Bajoran] option when speaking to one of the delegates. There might be ones for other species too.
I'd like to see this get added to other areas, particularly that one DS9 mission where you have to get kanar for the Cardassian ambassador.
