I have been grinding Mirror for 2 weeks now and I have seen every ship class the mirror event has in it.
Why is the "Imperial" class assault cruiser not in the mirror event?
You have the Noble class which makes no sense since there is nothing noble about the Terran Empire.
It would be an easy fix just change the Noble ship skins to the Imperial or just add the Imperial to Mirror event.

probably for the same reason you don't see the maelstrom, hephaestus, nimbus, nomad and comet, cryptic took them away from c-store , and made them fleet only skins, so they're no longer "regular" ships i guess.
also your logic for "noble" doesn't make much sense, considering nobles in general were anything but noble in human history as well, if anything it fits when you think about it.

So the Sentinel Class cruisers you see popping up in the invasion? Are assault cruisers. Supposedly.
This has been the case for over 2 years (possibly launch). And they still haven't gotten around to switching the names around.
The main reason we do not see 'newer' MU ships is because the enemy group is still made up entirely of launch-era ships, the same as the Starfleet enemy group. The MU Dreadnoughts are different, since they were specifically made for the events.
But it's the same with the Starfleet enemy group as well (including the Noble and Sovereign assault cruisers named after the other). It's also why the Starfleet enemy group doesn't have 'newer' ships like the Excelsior, Nebula, or whatnot. They're still working from the enemy group put in at launch. The last 'new' ship to be put into Fleet Support, for instance, was the Galaxy-X. Every ship from Fleet Support other than that is launch-era.
The ships described in OP came after launch, therefore were not around to be included when the enemy group was created. So no, you did not see 'every' ship class in MU.
There are no Mirror Excelsiors, Mirror Nebulas, Mirror Avengers, Mirror Vestas, Mirror Chimeras....
It has nothing to do with Fleet skins, the C-store, or even the Assault Cruiser/Star Cruiser being inversed (like in the lockboxes). It has 100% to do with the fact the Terran Empire enemy group is the same one from beta/launch, with special hand-made dreadnoughts specifically for the event that came after.
