Could you specify what is wrong with all the ships listed? Maybe then somebody can provide a more accurate suggestion on what to get.
P.s I fly the Defiant-R and there is only a minor flaw, the eng tac. everything else is just perfect on that ship.

I think I just want a ship That puts out High DPS, has high hull surivablity and is decent at sci and is decent at turning and healing.
The Fleet Excel would fit that role I think - if it has another LT tac Boff station - i am just put off by the 3 Eng - but all the other stats look great.
also double Aux2bat Fleet excel with technicians can put out horrifying firepower from behind huge hull and high shields.
I run the battery build with the time DEM doff so every other time I let rip with my BO3 and CRF the weapons power stays above 100. Have to be careful of the off cycle BO, as I have carelessly dropped my weapons power to 0 a few times. But a properly set up alpha with a weapon bat for the second round of BO CRF and you melt anything in the game. For PVE swarms swap CRF for CSV, and its drop a large ships shield facing and frag the spam around it in the first 5 seconds.
The ens eng isnt hat bad now that Eng team fixes alot of shutdown effects.
there is no single best ship for tac in sto...depends more on how you play, and what you like estheticly. The choice is yours...but if your choice falls on the star cruiser then i'm wasting my time here.
also some other ships i wouldn't even consider on that list, but thats my opinion...the star cruiser however is a waste for a tac toon and that is a fact.
the sci ships you listed, well possible, but then you should stack dmg abilitys (those get boosted by APalpha)...but in general sci vessels are not suited for tacs very well...there are exceptions ofcourse, but not on your list.

patrol escort...the fleet variant, not the basic one. have it too, most versatile of all the escorts and the most sturdy (not only on paper)
this one can pack a TBR and TSS and HE which is very handy for many, many applications...if you do not need TBR change the boff to something else. but that ability is just too damn awesome to ever not want it. dmg against unshielded stationary targets (basically all stfs) and crowd control at it's finest for starbase blockade, stf cure, infected, KA,
at the end i have to say that the breen ship may outshine them all, i have yet to test it...in january
The MVAM is the most effective PvE ship. The Lt Com sci slot offers so many options on the little escort.
Funny I have flown the regular free MVAM on another tac and its a supper fast ship - moving too fast some times for my point and click play style.
The real funny thing is that I bought the Adv MVAM in the last sale but have yet to try it out. The Current tac I am lvling just hit 46 so I will take it out first with this one.
I have so many ships It become a bog down - especially given that I spend 75% doffing.
Perhaps I will give the Fleet Excel a try too as it is only 1 ship module.

I have actually seen idiots ruin the opt on infected with TBR - pushing the nanites right at the Transformer!

If you have tried out all those ships you listed on your tac, then there isn't too much advice that can be given. Except for some minor differences, cannon-mounting escorts in PvE are not going to play any different from each other or require a different playstyle.
You're always going to get a relatively fast-turning ship, which you have to point at the enemy. Weather that ship is going to have a tiny bit more hull, a tad better turn rate or a Lt. Sci instead of a Lt. Eng. is not going to change much.
The Fleet Patrol for example, will "feel" the same and require the same basic tactics and playstyle as the Defiant-R, Fleet Defiant, MVAP, Steamrunner, Armitage or Fleet Sabre.
I'm a bit of a point-and-clicker myself (though not as bad as you by the sound of things :P ), but I do OK in a cannon escort. If you have a lifetime sub the Chimera's a pretty good ship. Lots of flexibility, works with beams and cannons, with slots you can use cool sci and eng powers with.
Assuming you don't have that a Vesta is also a good choice. An all-cannons setup on that can get you good DPS and Sci powers as well.
Since I don't have one yet I can't say anything about the Breen ship, but some folks are loving it.
So I took the Adv MVAM out today for the first time since my toon just hit lvl 50 - Granted it does not have the borg gear - just decent equipment - purple and blue M11
Took it into Infected elite - done that stupid think 1000 times so nothing new - managed not to Blow up even though I rushed to get in the 1 hour bonus event without even setting my power tray up.
Was kind of Meh. I will continue to play with it a bit.
Hows the Vesta for a tac - 27k hull seems kinda squishy.
Really hoping in Jan when the Andorian Ship comes out it is a Fast destroyer with a Good Boff layot and 10 consoles.

well that is not how i intended it to be used for^^ but i see your point. TBR is an ability that needs a brain to operate.

GW keeps mobs together. Focus on the weaker ships and watch as they destroy their friends with warpcore explosions.
Reason to split ship in PvE? Cuz its canon, just pretend you're the Doctor.
It's agile, it shield-tanks well for an escort, it has a lot of hull, it's boff slots are outstanding, it's console layout is very nice.
Using one as my PvE torp boat at the moment and I haven't had more fun in any Fed ship.

But it's growing on me.
I fly it in my Tac officer. Sturdy and puts out good DPS. I have a similar set up to the MVAM.
