But, I wanted to discuss the pros and cons of these two ships as the main topic.

A Vesta slotted with the Temporal Warfare set + an AP DHC could be a beast. But, the tactical console is phaser based and the engineering = no weapons. Leaving you just slotting the science console...
The Vesta is more offensive capable with the ability to take DHCs, and the Aux Phaser DHC it comes with will open up some interesting power level trade-offs. The Hangar opens up some possibilities as well, Danubes for crowd control, Peregrines for more firepower, or Shield Repair Drones for more Tank.
Indeed neither ship has a huge weakness... this is what I'm thinking atm
Take the Vesta Science Variant and do this....

I'd go Borg or Positron mk XII with structural mod for Deflector and then MACO Mk XII Sheilds before the Adapted is unlocked. The extra hull points and Resilient sheilds will be needed to let this ship have any sort of tank too it (bleed through and plasma burn could kill it if you're not watching things, especially with only one armor console on your config).
Not sure how I'd go once the Adapted MACO is unlocked, but since you don't seem to mind having limited tanking abilities, having Adapted MACO Deflector and Engines for the Aux boosts, but standard MACO MK XII Shields for the Power Conduit proc sounds better than the three piece to me (the pseudo-cloak thing gets knocked off whenever you launch fighters anyway).
Your console layout seems very heavy on the Universal consoles, and is kinda of odd seeing only one armor console when you seemed to intend using the Rademaker Class.
I plan on shield tanking for the most part, which is the reason I plan to use the Rademaker Class. The Borg set is the best at Shield tanking, which is the plan until I unlock the Adapted set.
Will mostly just be trial and error for what works best for the ship. I do have every set on this toon, so I'll be able to tailor to taste.
The Borg Assimilated Module console no longer counts for the Borg set in S7, so you have to have Borg Def, Shields and Engine to get the sheild proc.
Not sure what you mean by the Rademaker Class being good at shield tanking, it's console is basically Polarize Hull with an extra kinetic reflect attached from what the Blog says. The Vesta Class proper would be best at shield tanking with it's 5 Science consoles, as Field Generators and Shield Emitter Amplifiers stack, plus the console heals both hull and shields.
Edit: ah, missed "+5 Power to Shield Systems" for the Rade. I think the Vesta class proper still would be better, 5 more Aux means your TSS does a bit better and the extra Sci console slot will help a lot if you put Field Generators and Shield Emitter Amplifiers in them.
Yes, I'm aware of the Borg set changes. I may just wear my MACO until I get my Adapted MACO.
However I'd have the Autonomous Regeneration Sequencer which is a nice hull heal. While cycling EPtS... effectively putting my shield power over 100.. my base regen on my shield will be x3.
As far as Universal Consoles go, if I find myself rarely using them. I'll just replace them with something else that would help my ship boff power layout. I already have a purple MKXII Field Gen slotted.
Can't wait till we get "Trait Respecs"... I could finally dump Techie for Astrophysicist.
As far as the two ships go the wells and vest are really close on stats. The Wells is just a bit zippier, and its consoles make it a best in a communicating team.
The Vesta seems as though it can either be a Good sci healer/disable with some focused dps. Even more so once the MACO set changes hit from tribble. I can see a maco 3 piece hit followed by VM, finished with a Sub nuke as being all sorts of bad. with you having the DPS to do the final dead yourself. So not so much the main sci of the group but a rather good off escort off healer/disable.
But I'm rather Tac ability focused in thinking it has a bunch of universals could be so really fun non DPSy builds as well.

I have the Korath KDF side so already have a good idea of what the Wells is like. The Vesta reminds me a bit of the Kar'fi pre-buff with a much better turnrate.
