You don't trust how people handle food in your town ??? That is a very devastating conclusion for the city, tourism, gastronomic scene and the entire profession in global.
In my "3rd world country" we use 100% fresh ingredients only...
Any restaurant that is serious in idea to deal with this business must use them and have highly trained personnel who are able to respond to customer (audience) requirements.
Yes I do use term "audience" for my customers because I believe that the culinary is arts as well as a theater is, sometimes even more complex because the person uses more senses when he/she visits the restaurant, and eventual satisfaction or dissatisfaction is much more distinct.
Delivery network works perfectly here, in my hometown Zagreb for example which is 400 kilometers away from the coast every morning arrives fresh fish, shrimp, clams, lobsters and other foods of marine origin, from Western Province Istria we get best black and white Truffles with which you can create little food masterpieces, from Eastern Province Slavonia come all kinds of naturally grown meat and vegetables.
We have all kinds of spices, which we keep in a special greenhouse holding the plants located in the kitchen and use them as needed to guarantee freshness of a taste in every meal.
Of course the presentation of the meal is extremely important, from the raw stage till the moment when the meal is served on the plate (for sea food special cabinet and a swimming pool for lobsters where customers can see from first hand what will they ordere) and it is very important that when customer consume his dish he must feel by a sense of that dish is made just for him.
etc etc...this is only a small part of my philosophy when it comes to job that I do.
And thank God that Croatians are very immune on the Americanized way of eating that is in 80% of cases based down on reheating food (even in restaurants), McDonald's and other junk food "holes" (that are empty most of the day LOL) and know how to recognize and offer healthy, delicious and spectacular food.
I am extremely grateful for that fact.
And to lest any confusion, I am talking only about the restaurants, not about how someone's mom or grandma cooks and I am not trying to belittle in anyone with what I wrote here.
That is just for idiots who might start to twist my words.

Ah val, something we agree on!
I truly appreciate a chef that takes pride in his art. Don't misunderstand, there are places I go that I trust perfectly, but in general I am a bit cautious with seafood because of how sick it can make you if not handled property. I am too far inland to trust everyone :P

I actually do wash my hands after eachof those instances, sgt, but I'm also very careful with food, and food prep (comes from my many years as a butcher). Hmmm I believe that val has the ability to speak intellectually, perhaps he chooses not to under certain circumstances? I know that I always wash my hands after those instances, whether I am cooking for myself or others....I would assume any normal/clean person would. When you are cooking, the best way to contaminate something is to be unclean. Nothing worse than going to one of those open kitchen places and see those chefs rubbing and touching their faces and neck and then back to food prep without washing....I immediately leave.0 -

Funny story about that...
Apparently, everywhere I work I have to make everything uniform. This happened at my last job, when I was a steward of a semi-nice buffet-style dinner theatre restaurant. We keep the food warm with sternos (gas flames in a can), and we keep a stock of them set up under the counter from which we run the buffet. Whenever I worked, I would always check that stock to make sure that every single stack had the same amount, and that they were all lined up straight. One of my co-workers noticed, and commented that it seemed like something Monk would do.b:chuckle0
