At any rate, whether one goes Demon Spark or Sage Spark is entirely a preference of Play Style. If you prefer skill spamming, then Sage Spark is the way to go. If on the other hand you prefer relaxing a bit as you farm, then you want Demon Spark. If you do PvP at all, then you will likely want Demon Spark from what I understand.

To give a semi-serious answer to this silly question :

Your comparaison makes me wonder if you even got a lvl1 sin. First off, need to fix some things.
-Windshield should not be used permanently on a sage sin when soloing, unless it's a weak boss you want to kill a little faster. When talking about bosses that are really worth soloing (3-x or wb), you might want to use it when out of spark and chi cause of sleep/stuns/seals. However, for soloing purposes of difficult bosses, chi siphon or cloud eruption is actually better.
-Demon with all DoT shards in armor won't be to suited for soloing any though bosses. The "att lvls = more damage = more heals" is nice on the paper, but with bosses that seal/stun/sleep/purge/amp/debuff, you must have a minimum of survivability. From my experience with sins build like that, they even get cleric buffs for an easy instance like nirvana. I don't think that build matches the objective of "solo farming".
-What is the definition of "best" for you. Does that mean you want to be able to kill the thoughest wb around, or does it mean you want to solo 3-x in the best possible time, or does it mean you want to kill as fast as possible even if there are bosses you can't kill with the said build?
-If looking at though bosses, sage with 2.5 aps with r9 belt + weap actually works better then 2.86 aps. Aps is not the only factor to look at. There are also the factors like demon ribstrike, and sage temporary buffs (tidal etc).

So, to directly answer your question :
Both proposed solutions suck for solo farming.

To get to a real answer, you can compare some builds with a simplified view :

-Demon with DoT : Best dps option for sure, but won't allow you to really solo much. If you don't look to solo, but just nirvana etc, this will probably be the best build.

-Demon with vit/josd or Sage with dot : Balanced between damage and soloing. Those builds are roughly equal in soloing hard stuff, just depends on playstyle. With high refined gear, you can solo like 95% of the bosses with either build.

-Sage with vit/josd : Could probably solo anything, but is the loss of damage really worth the capability to solo those 3 or 4 extra bosses?

Ofc, this is just pve wise. Also, you can mix all kinds of shards in your armor, so are not bound to "all dot" or "all vit stones".
