Hello everyone. I'm another new player.

I've been reading posts and trying to understand the ins and outs of the game, but I have a question. I live in Texas and I'm not familiar with any of the servers on the game. Does anyone have a suggestion about which server I should choose.

You're pretty much in between both of our server sets. Our east coast servers are Harshlands and Dreamweaver, and the others are on the west coast. The determining factor for you, other than if you already have friends somewhere, should probably be based on the latency from where you are.

Open up the game, and above the login box click the "switch" button. Look at the latencies of the servers listed, and the ones with the lowest will probably be your best bet.

Should also mention that two of the servers (Lost City and Harshlands) are PvP (auto PvP mode at lvl30), while the others are PvE (optional PvP mode at lvl30) - you'll definitely want to take into consideration.
