    Sage/Demon give different skill effects for each of your skills, and the additional skills you can learn are also different.

    Example:

    Sage Pyrogram has a 20% chance to restore 25 Chi
    Demon Pyrogram has -0.2sec channeling time.

    The additional skills would be the fury bursts and the Chi skills.

    Sage: Fairy Air: Restores 50 Chi (Cooldown: 1 minute. Channeling/Casting:Instant)
    Demon: WhateverElse: Lowers a foe's Chi by 50. (Cooldown: 1 minute. Channeling/Casting:Instant)

    Pretty cool stuff. Plus, there's a little flying pet-thing that floats around you that depends on your cultivation.

    Sage89: Little blue/white fairy
    Sage99: Big white/yellow fairy
    Sage109: Big blue/white fairy

    Demon89: Little rep imp
    Demon99: Red 6-winged Demon
    Demon109: Purple 6-winged Demon

    As far as I know,each path does nothing direclty for your stats.However they do buff certain skills as has already been mentioned. Another thing to remember, sage tends to be more defensive while demon tends to be more offensive.
