Questions about * items and upgrading

Can someone explain about this * and ** items, etc.
From what I've heard, the more stars, the better, but that's about all I understand.

Also, how does the upgrading work. I've read you need Mirage stones to upgrade. Is this all you need Mirage stones for, and is the sole purpose of the other 3 celestones just to merge them into Mirage stones? Is there any point to the celestone fragments?
