    At the log-in screen in-game, there should be something that says "Server: _____ " at the top of the window, and it should have a name in the blank and a button with "Switch" next to it. If you click Switch, it'll bring up a list of the available servers (3 at the moment: Lost City (PvP), Heavens Tear (PvE), and Sanctuary (PvE)) for you to choose from. A PvP server means you go completely PvP based after level 30, and will probably be doing more PKing than questing or farming/manufacturing etc. PvE is for just the opposite.
