Buy a Man at Arms for 5 Gold, sell to merchant when no longer needed for 50 Silver, something like that.

If it is in the inventory, you can do something.
However, in this case, it is not in the inventory but is in "Companion". You can see them in "Manage all Companion". If you right click the companion, you have only 3 choices: 1. Summon this Companion 2. Rename 3. Mark As Favorite
You cannot remove it from your "Manage all companion" and drop that to your inventory as character bound. You cannot add another companion which is the same. @baucoin mentioned if you have a white Man at Arms in your "Manage All companion", you cannot remove it. You cannot replace it by a purple Man at Arms because you already have a white Man at Arms. You stuck with it.
So, you are newbie, bought a white Man at arm (and probably all the white available to boost Bolster). After many months later, you were lucky to get a drop of a purple Man at arm. You can't upgrade your companion (as replacing your white with a purple). You only choice (at the moment) is to sell it (to those who did not make that mistake to have all the cheap white in his companion stable) or pass that to another character.
They need to provide a way to remove the companion from 'Manage All companion" and drop that to normal inventory (as character bound companion) so that people can discard it and/or sell it so that they can equip a better rank of the same companion.
