So I've been playing lots of foundries and see that you can have mini-boss but I'm not sure how to make it happen? Any info on this will be greatly appriciated

Usually any enemies with the difficulty "solo" (Do not get confused with solo as in only one enemy in the encounter, this is a difficulty like elite or minion.) make good minibosses ( And bosses since this is the toughest you can have.). You can have respawning trash and such using complicated combinations of guards, enemies, and "Appear when component complete settings" but I would recommend starting off with just the "Solo" difficulty enemy. (Ogres are a common one for example, you then just change the costume.) Also, you would probably get more replies by posting in the non preview server foundry section.
Neverwinter players are stubborn things....until you strip them down to bone. (Cursed players, my flowers, MINE!) Oh how I plotted their demise.
