I remember noticing a while back that some people said they had done it with a group lineup concisting of 1 of each class. In my regular group we run with 1 of each class and now we've been attempting the Dragon a couple of times with no succes. If I try to look up videos on youtube they all run with the same lineup: 2 CW's, 2 Clerics and 1 Rogue.

You are wrong, we've done this with one Cleric and one CW, and as OP asked for, one of each class.
Then you had a perfect fight. For the rest of us, running a perfect fight is a rarity. Every so often the cleric forgets to cast AS in divinity. Every so often the CW messes up the shield pop. It might take a tiny bit longer, but by not having a GF/GWF you are avoiding carrying dead weight and it makes the run that much safer.

You are absolutely right about GF's and GWF's being dead weight on that fight, and to be honest, we only tried to do it out of curiousity of it being possible in the first place. It's not something I want to do again, it did take us a about 9 tries or so, after all.
But if anyone is interesting in doing it, I would recommend a fully defensive specced Cleric with tank jewelry, as well as a good CW specced for Action Point gen.

Tried CN last night with this set up, I am a CW, all I got to say it was painful and stressful. The CW can control the packs of mobs fine using a Blackhole, shield pop, steal time combo which basically if done right will allow you to spam blackholes. But if you mess up or miss a few mobs meaning you don't get enough action points for the next black hole you and your party are going to die most prob the cleric first followed by everyone else.
Power is fairly worthless, crit starts to diminish at about 1500, which only leaves you with the loss of recovery, and while recovery is an awesome stat, the extra defenses is much more valuable in most cases.

Yes, and recovery until you're at a comfortable level with your encounter cooldowns and AP gain and defensive stats from there on out. Defense, health and Regeneration are all pretty good. Deflect less so.

Both the GWF and Guardian have a fairly low impact on that fight.
And I can't even imagine trying to solo heal it.
