One would be a single series anime called Now and then, Here and there. Its a great coming of age story about a young man from our world thrust into a strange steam punkish post apocalyptic land with forced training of children into child soldiers for a mad mans army. It deals with some heavy subjects and might make one shed a few tears before it is over.

Sounds awesome how long is it like 1 hour or so those are the ones i love longer the more story the better

But yeah, regarding Full Metal Alchemist - You should know (or maybe you do?) that there are two series with the same name. The one mentioned and FMA: Brotherhood. While the first series was created at the same time as the manga, it finally got to close to it and had to create a second season of fillers. However, now that the series is done Brotherhood is more "attuned" to the original source material.
And for the record, I do strongly recommend some Lupin the 3rd. "A Woman Named Fujiko Mine" can be seen both for mature viewers, as well as an introduction to the main characters.

You're Under Arrest! remains to this day as my favorite anime of all time. Creator also did Ah! My Goddess.
Nothing too outrageous. Just a slice of life anime revolving around two female cops and their relationships concerning their professional and personal lives. A nice blend of humor, feels and police action. A lot of detail has been put in the animation and artwork involving the city of Tokyo and automobiles set in the 90's too and it has aged quite well.
From what I have seen (the first 4 episodes), Fate/Stay Night is fascinating as a show.
Basically the world has wizards who summon people to help them fight rival wizards to get the Holy Grail.
Said people who are summoned tend to be either people who have unusual talents, or in many cases historical or mythological figures.
The protagonist summons King Arthur. And ends up falling in love with *cough* him.
And it's all sweet and awesome and the fights aren't as drawn out and silly as in some fighting-focused shows, and the soundtrack is pretty decent.
Beyond FSN, the next show I would recommend is Ouran High School Host Club which, on its surface is everything I hate in anime, yet it somehow is a guilty pleasure of mine, and I will watch the entire series in a marathon on a friday night through to saturday morning from time to time, as I have done before. It's... bizarre, and I love and hate it for being so.
Next show I'd recommend is Tsukihime. It's... Unusual. Basically, artist girl helps some manga artists save their home. She has a jellyfish fixation. The artwork as a whole is AMAZING.
After that I'd recommend Welcome to the N.H.K, simply because it's actually surprisingly cerebral despite the first few episodes seeming like it's a simple concept. It pretty much follows the life of a severely depressed and a little bit manic NEET (basically the kind of nerd who has given up on the outside world) as he gets dragged out of his safety net by someone who actually spoiler is just as bad as he is, and also explores Japanese nerd culture quite interestingly to someone like me who figured it'd be much the same as in the UK.
There is a show I vaguely remember being awesome, it was called Occult Academy or something. Basically a tech and camera wielding guy from the future is sent back in time to prevent a major cataclysm, seeking the help of a daughter of a magic academy in the past. Or something. I remember enjoying it mostly because it had an assertive female character who wasn't necessarily a tsundere archetype for a main character.
In a similar vein, Speedgrapher was decent, not least because its opening theme is "Girls on Film" but because it had a very much supernatural-psychological thriller theme going on, and the action in particular was well done, with characters looking dynamic and amazing, and the villains being kind of horrible and horrific and terrifying and in a way the main character is kind of not all good too and just watch it okay?
Then I'd round it all off with watching Dennou Coil. The show itself is kind of dull, the plot is weak in my opinion, but it's the most interesting depiction of augmented reality glasses in fiction i have ever seen, so from a "what is kind of possible at least in overall style with future tech" perspective it's fun, but from an entertainment perspective, eh, you can give it a miss I suppose.
You didn't state what types of anime you were looking for so people are just throwing names out all over the place. There are a bunch of anime genres some of which you may want to avoid. However the number one anime must see by your eyes only is clearly:

Okay I lied, don't watch that. Don't even type it into Google. Just forget about it and move on.
If you want some currently airing anime there's a few different types at the moment.
Sabagebu! - Comedy, one of the funniest anime's I've watched too be honest however may not be for everyone.
Zankyou no Terror - Psycho Thriller, a really good anime some of the scenes in it are amazingly done and it really keeps you on your seat.
I'm watching a few others however I doubt you would like them much. As for the more popular ones I am watching currently airing there is.
If you want to know of a full list of my favourite anime's that I'd suggest to you I'd kinda have to know what you like because it'd take me a while to list it all out and in catagories so it isn't too random looking name wise. I like something in most genres, the only real one I never got into that much is mecha and... Hentai. <_< Don't see a point in it.
Well i'm a huge freaking fan of Redline but i like action packed anime with a bit of romance here and there just something with a solid story and if would ne really helpfull if yall could place some links! ^_^
If you want something that will get you ostracised and considered a pervert if watching in public, I recommend Kiss X Sis, which perplexes me a lot.
It's basically your standard little sister fetish story, blah blah blah, half siblings blah blah blah hormones and shenanigans, but completely stripping it of everything that is actually porn and just leaving the basic plot of the story that people see time after time.
It's like if the "hot pizza guy meeting hot customer on a delivery" plot on a live action porn ust turned into a thirty episode series about a lady repeatedly ordering pizza, getting to know the delivery man well, but without any sexy shenanigans, just mild flirting if that.
It's strange and because of that it's worth a recommendation from me because seriously, what is this?

And Shirow is great.
