Here's a list I put together based on some discussions I had about this with friends.
Leo's Bar - A small music venue with a bar and a more hard rock/metal feel. It offers something a little different from Club Caprice's weird mix of vibes, Sherrerra's run-down dive, and the locales in VB.
The UNTIL hovership from Sky Command - Just a personal favorite of mine, and it makes a good UNTIL/military base, or superhero deployment platform. Maybe we could take a helicopter from UNTIL to reach it?
The basic bank map - This one has a mix of bank, lobby, and cubicles, so it fits a range of RP scenes.
The Warehouse from Dark Dealings at the Docks - This was a small but good warehouse.
The science lab from the LadyHawke serial story - This one has it all - usable seating, computer stations, whiteboards, medical gurneys. The existing science lab social zone is missing a lot of that cool sciency stuff. It would be lovely if this other science lab could be added to the existing one as another room or floor.
Ice station bunkers from Whiteout are cool spaces with bunks, storage, etc. Force Station Steelehead's interior is a cool command center, minus the blood pools everywhere.
I'm sure others have their preferences, but these are ones I think would be a great addition.
Guy Sweetland's Restaurant (Mission: The Sweetest Thing, and also one of the newer serial story missions where you fight Talisman in there). A nice formal restaurant and lounge setting.
One of the Vibora Bay mansion maps: this one's harder because I think there are several different variants of it. There's a really nice, small mansion version in the A Life in Hiding mission from the serial story, but there's also a much more sprawling version that features a whole personal theater and a big library/sitting room, master bedroom, ballroom, the works. I'm not sure what mission it's in but I know it was a New Shadows one, I remember the theater being full of bats.
Definitely agree especially on the bank, that'd be super-great to have!
I both like and agree with the potential open instances listed.
I also think the Mercy Hospital interior such as that found in single serial mission would be nice too. Preferably with a few more knick-knacks added.
I also have this map a friend of mine found of places just within MC that are potential places. I think some are already on your list, but its a cool map to have!
I love what's been placed here and would enjoy having it implemented.
Additionally:
-Some sort of college or high school interior would be great.
-A setting for a prison of some kind would be excellent to have for RPers.
-A general corporate office with cubicles would be outstanding too.
All sound like great ideas, especially Leo's or a the prison. Either the prison in MC or in the desert, not a whole lot to do out in the latter right now, could be a welcome addition.

I know of Juryrig Duty (from Black Mask) and Of Serums and Secrets (from Robert Caliburn). One has a massive ballroom and one has a movie theater, dining room, and study.

Yeah, since in-universe Mind Inc. is a Totally-Legitimate Company, it'd be cool if you could walk in and see the place whenever. Being able to enter some of these prominent buildings adds a lot, IMO. The bank and Mercy Hospital lobby, too. Even the Museum from... "Breaking the Wall Down", I think, the serial story mission with Dr. Ka?
The mansion map I was thinking of is "Clark Robinson's Mansion" I think, if the exact name helps.
And for context to anyone wondering, Kaiserin posted on the Discord that it's relatively easy to make existing locations into social instances, and suggested someone make a Suggestions post with ideas, so this is a response to that!
Maybe one of the Qularr Ships or Underground spots will be nice , however I'd love to have the choice to have team-based instances, so RPers in a team, can do it without the worry of other players.

Totally in favor of some non-club, non-bar RP spaces like that, yeah. Most of the social zones we have access to have a bar in them. Caprice. Sherrerra's. The new ones in VB. The hunting lodge on MI. The Project Clockwork station. Soon, Leo's. If more social spaces come, I hope the next couple aren't bars at all.

Seconded on the sewer that Kevin Poe hides in. I prefer the classic labyrinth look over the bland 'real-world' sewer.
I would love, love, love to see this asset become a social zone. Or heck, even just flying above the city.
It has a top deck we could stroll around.
The lower deck where we spawn in the Sky Command mission.
And the whole exterior is dynamic, and great for roleplay.
