As has been mentioned time and time again, it is becoming an industry practice. The producers (not the devs) know that people will pay to play the game when it isn't quite polished. Why shouldn't they go with it if the market will bear it? No one forces people to spend money on the games.
I believe (and may be wrong) that you don't have to actively do anything, other than interact with Profession nodes - the event just indicates that the results of your interactions (the loot) will be better during that time period.

Look to the little glowing diamond symbol on the top of your screen. That is the Astral Diamond Exchange and your AD are there until such time as you claim them. REMEMBER - the AD is for your account, not a particular character, so if you take it on one character and then delete that character, you will lose all your AD.

The coins do not expire at all, so long as you Invoke at least once per 24 hours. You can only earn one coin per 24 hours, so earning seven is a simple matter of invoking once a day for seven days in a row.
