I finally got in one of these last night, and witnessed the same thing. What's funny is that at the portal to the boss, there are invisible walls everywhere, but none are used prior to that to prevent the kiddies from skipping everything to get their useless T1 gear in 2 minutes.
It's not for useless T1 gear. With only a short, 30 minute window in which to Queue, delve, and loot those GG coins, of course players would look for any alternative to actually clearing all of that trash. A speedy group including a Cleric and a Guardian can get nearly instant queues for a run at T1 4-5 times in that 30-minute window.
It's not the skips that are necessarily the problems in dungeons. No, it's that players can unlock campfires illegitimately--in almost any dungeon (if not every dungeon).
I hope to see far less trash, with much more hit points on those encounters remaining, and no way to illegitimately unlock campfires. Streamline dungeons in favor of player enjoyment instead of packing randomized loot into boxes at the end of pure slogfests.
