I've seen that has offered only three languages. I wonder whether I would be able to put the English, but to write the entire quest in another language. I would like to make a quest on Croatian language, for our players.
Can I do it?

I've seen quests in languages not officially supported (Spanish & Italian to be precise). They were both under the "English" tab.
And yes, you can do it, I'd advise you though to write something like "This quest is in Croatian! Please don't complain about this. You were warned!" in the description.
And even with this warning, be prepared that you WILL receive negative reviews by people (idiots) who cannot understand Croatian.

You can not use Cyrillic (if Croatian uses that) however. The Foundry will show it in the dialog editor but only display questions marks for it when running the quest in Foundry preview and presumably when live as well.
