Have a level 15 GWF, got a cleric companion at level 4 so she's helped A TON in keeping me up and now I'm starting to actually be somewhat normal, albeit squishy.
Curious as to what stats I should focus on while I level? Should I just stack as much defense as I can, and maybe deflection? Doing so I'd lose quite a bit of power and crit, but if I can survive a lot better I really dont mind. I also heard to stack ArP too but not sure since GWF is different ball game compared to other classes at lower levels so far.
To be perfectly honest, at that level it doesn't really matter because no matter what you invest in it won't make a marked difference. If you want survival AND damage you should either focus on Regen or Life Steal as they both are commonly associated with Penetration which is a good offensive stat. As you level you can flesh out into other stats but until then just stick with what I just covered.

I'm no expert by any means but I've got a level 35 GWF and I've been concentrating on Critical Strike, Life Steal, and Regeneration whenever possible. My Critical Strike chance is something like 20.5% but it seems to hit a heck of a lot more often than that -- sometimes every other hit or every third.
I just died for the first time yesterday, in the Defend the Temple skirmish (I think that's what it's called). It's the one where you have to kill the boss characters and their shards. Their "big attack is coming" circles were coming very frequently, and they were hitting for something like 3000 damage or so several times in a row. I ended up dying a total of four times in that skirmish (I wasn't the only one thankfully), but we finished it.
I was trying to get away from using the cleric companion, because she maxes out at level 15 and the books to train her to higher levels are "coming soon." I've got the Jagged Dancing Blade (25 max)and the Phoera (30 max), but I seem to have become dependent on the cleric's heals...
I use the cleric less and less. Now the only time I have her out is when my cat is off training otherwise she's stowed. Later on in your mid 40's to 50's she pulls aggro so fast she's dead before you can do anything about it.
So I stick with the cat. She's awesome anyway so it's no real loss.
