They probably wear plate... Clerics are the ones who are supposed to wear mail, at least according to D&D rules.
At any rate we will see that tomorrow, and I'm pretty sure the professions let you preview what you're crafting so you'll know whether it is for GWF or not. The crafting NPCs should explain what every profession does and which lasses benefit from them as well.
We use mail.

Multiple Personas, only 'One' me

Scale armor would qualify as light armor, so likely the same profession as mail.
I think there's one crafting profession for each.
Chainmail = Mailsmithing
Scale = Platesmithing
Leather = Leatherworking
Cloth = Tailoring
