After many deaths and teeth gnashing, I found that leading the beast into the room with all the traps arranged around the edges of the room worked best.
I was using a Hunter-Ranger specializing in ranged combat, and just kept a trap between me and the beast at all times, and he went down. The quest did not finished then and there, I went back to the main room and killed the 2 winter wolf adds and when they went down the quest triggered and the quest reward chest lit up.
Keep WELL away from his red fields, because if you are even near the red fields of his attacks you will still take heavy damage. I think the trap kiting is the best all around solution because the other mobs don't follow and you don't have to go toe-to-toe with the beast.
Don't drift to far away from the beast's main room, or when you go back he will be there again.

When the Devs made changes there, their description led me to believe that was too far to take the "Hound" and the Beast would return to it's lair.
