I've had good luck so far with recovery/armor pen/life steal. I solo almost exclusively and haven't touched endgame dungeons. I'm sitting at 10% life steal, and it is enough to get me through most fights without a potion even after my cleric inevitably stands in the bad and goes down.
It can depend on your level, and what build you are looking to pursue, etc. However Recovery/Crit/ArmPen/Power are all solid, however for leveling the LifeSteal suggestion can be good, and 10% is a helluva lot to heal!
Focus on Regeneration over all else, you will not need a cleric ever again. Life tap has very low returns and you may find it is not really useful until you get over 8-900 life tap. Crit is important for increasing damage and deflection will give you the best defensive returns. I personally use the following guidelines for solo leveling and find it very strong. Regen>Critical>Deflection> Armor Penetration>Defense>Recovery>Power>Lifetap This will change if you do more grouping but for solo content this will serve you well. When your regen is sufficient to minimize your downtime you can swap out the Cleric for any other Companion and I think you will find the content much easier. The Man At Arms is particularly effective.
Depends really, for my build that I'm working on I'm going Sentinel and I'm stacking Armour Penetration and Deflect while my Cleric Companion is stacking in Recovery items, and Defense runes. At a small level of 36 she's got Armour Penetration of 16.2 Damage Resistance of 20.6 and a Deflection Chance of 29.6
Power has very poor returns for GWF unless you go Destroyer path or Instigator path and does not come into effect until level 44 as destroyer or 49 as instigator if I recall, and the instigator bonus does notwork well for PVE solo because it requires someone else to be hit.
When I say power is a low priority it is because you can't not have power if you try. Ignoring power entirely with my 60 GWF I have over 4k. Even if I Drop to full tank gear and loose all the Power from my armor to put on the Titan set I am still over 3k.
Crit is a very good offensive stat for us because we have abilities that trigger from it and we have a feat that increases crit severity so we get a lot from our crits.
Armor Penetrations is generally the Best DPS stat but monsters have limited Armor Penetration so once you get to 24% armor penetration you are pretty much getting no benefits. Now 24% is the number for PVE bosses. If you are soloing, odds are you need a bit less. Also your Con gives you 1% per point after 10 but this does not show in your stats so if you have 20 con you want a max of 14% penetration.
Recovery lets you use dailies and Encounter powers more often and that is where the big damage comes from.
For self healing Regeneration has the best returns for a class with high HP like the GWF. It seems small at first but the lower your health the more it heals. You will not top off a lot with regen but you will usually sit comfortably at 70 - 80% health after most fights.
Deflection has the best defensive return which is why I prioritized it next.
Generally for solo you need balance so alternate priorities between one defensive stat and one offensive stat.
Currently I am leveling another GWF because I love the class. The new one is level 25 and has never used a potion. I am still carrying the ones Wilhelm gave me at Dragon Bridge. I am using the Sellsword follower because i like the look of a GWF so why not two. The only heal I had was Recovery strike until level 20 when regen gear started appearing.
The sell price at vendor. Really. Now that our encounters are buffed, I don't even go shopping for goods on the AH most of the time. The "must have best gear" slogan is no longer required.
I will however delay selling the item if it provides an increase in weapon damage, defense, recovery or crit.

My GWF is 30 and I am enjoying the class, but have not really made the choice to go down which paragon path yet. I like the talk about regeneration because I have always favored a self healing Paladin type character. I am strictly doing PVE stuff and mostly solo as my hours with my job are wacky.
Since your leveling a new one, with the knowledge from your first, how are you speccing this one?
As I am only level 26 there are no real choices to be made yet. I started as a Hafling with a 16/16/16 build and plan to end up 20/22/20 str/con/dex.
As far as feats go Disciple of Strength Devastating critical, and endless assault are all that matter at heroic. Toughness Unstoppable action and steely defense are all good but in the option category based on play style. I am putting a point in the endline of course because its a great value for the one point.
