I keep reading about how easy this is and truth be told getting to 60 WAS easy breezing through ground mission IS easy and if I'm facing a ship my size or maybe a size larger I'm good. But when I see the word battleship I know for a fact that I'm going to be dying a few times. It seems like if I miss one plasma torp I'm shooting from 100 to 50 to already dead. I'm using cannons I'm a little better at lining up so I canhit something but I' not loving how fast I trun usually and if I get tractored I'm re spawning. So I guess I'm asking some of the Escort boys, I want to kill things faster die less what do yall do?
So I'm talking energy levels, what should I be usinf to turn? Should I drop my aix and or shields to min for enignes or drop eng for shileds? What are the chances that reading tool tips alone I simply made every incorrect choice?

no, bad idea.
first thing fix your weapons, get at least 3 duel heavy cannons and 2 turrets of whatever damage type you want, don't worry to much about mods just get whatever you can at mark 12 very rare. for your last weapons two if you want torpedo can be useful, personally I always do but that may not but be the best choice for now. then get the right tact console to boost your weapons, if your using torps don't worry about using tact consoles for them in less it's part of a set.
then switch to using cannon: rapid fire if you not using it already, makesure your have sci team I, hazard emitters II, and some version of attack pattern omega and I suggest the ltc sci skil be tyken's rift is pretty good at softening up stronger targets. if your using torps, high yield and Kemocite-Laced Weaponry may help. for you engineering slot just use engineering team I and emergency power to weapons.
for basic tactics, burst down the battleship/dread/whatever big scary thing first, then worry about the little ones, if the group has some that summons fight kill them next except tzenkethi ships kill the little ones first then move on to their big ship.
if I stop posting it doesn't make you right it. just means I don't have enough rum to continue interacting with you.
Also, use your speed and maneuverability to try and hit from the rear and or sides. For most enemies, hitting from the rear is best due to lower numbers of weapons or lower damage weapons in the rear. That I know of there are no NPC ships with 360 degree weapons in the front so hitting from the rear basically means none of their front weapons can hit you, your shields last a lot longer and you do some major damage before having to turn off. There are a few ships that actually do some heavy damage from the rear but you'll quickly figure out which ones, hit those from the sides, and the Romulan ships with their plasma rain of death from either front or rear, well....
You might wanna have a look at the builds/guides about ship buildling we've published at sto-league.com. Especially the budget builds for the latest free ships from events might be usefull, since most of the gear there is from episodes or easy and cheap to obtain via your fleet.

My BoP captain needed the stuff way back when for the exact same reason the OP describes. It's the green cannister with GTF outta Dodge written on it. Evasive Maneuvers in a can! (My Klingon mule has half a bank page filled with stacks of five. What can I say, when I find something good I grind.)
Evasive Maneuvers is an ability I've learned to hoard until absolutely necessary.
Engine Batteries will also provide a boost and turn on Offline engines.
Polarize Hull grants 15 seconds of immunity to Tractors.
Hazard Emitters is so generally useful that all my Science BOffs have it, and at least one copy is available on all my ships.
